Warm potato salad with mushrooms and cheeses
This salad is unbelievably good! The combination of potatoes, cottage cheese, mushrooms, pears and chanterelles may sound a bit strange, but don’t be fooled. The result is a luxurious and healthy dish that will impress many a guest.
INGREDIENTS
- 400 g of small potatoes
- 400 g of mushrooms (mushrooms, portobello or oyster mushrooms)
- 125 g of Olomouc cottage cheese “pieces with fried onion”
- 100 g of drumsticks
- 1 tablespoon of apple cider vinegar
- 1 bunch of spring onions
- 2 pears
- olive oil
- salt and pepper
METHOD
- Clean the potatoes well and boil them with the skin in salted water so that they remain a little firmer, i.e. not boiled, because you will still roast them.
- Leave to cool and, if necessary, cut into smaller pieces.
- Clean the mushrooms and cut them into pieces.
- Cut the spring onion into rounds.
- Heat the olive oil in a pan and fry the potatoes until golden.
- Then transfer them to a bowl and fry the mushrooms in a pan.
- Use a little extra oil if needed.
- Once the mushrooms have softened, add the chopped spring onions and fry for a while longer.
- At the end of baking, add cottage cheese and sliced pears.
- Reheat only briefly, as the pears would start to fall apart if roasted for a long time.
- Add the roasted mushroom mixture to the potatoes, drizzle with vinegar and mix.
- Top each portion with fennel leaves on a plate and serve while still warm.

Olomouc cheese curds in potato cake
Although it’s not exactly the healthiest dish, it’s a treat! Cheesecakes in potato pancakes with bacon cannot be resisted.
INGREDIENTS
- 9 potatoes
- 4 eggs
- 2 onions
- 5 cloves of garlic
- marjoram
- salt
- 150 g of Olomouc cheese curds
- ground black pepper
- 150 g of English bacon
METHOD
- Clean the potatoes and grate them on a grater.
- Add chopped onion, garlic, spices, egg and mix.
- Finally, add diced bacon.
- Put part of the mixture on the hot oil and place a slice of Olomouc cheese on top of it, cover with the mixture again and fry until golden on both sides.

Cheese tartare with onion
A wonderful and simple recipe for cheese tartare with onions, which friends of this aromatic wonder will love after the first bite. Quick preparation and commonly available ingredients are another big advantage. So why not prepare it today?
INGREDIENTS
- 2 packs of Olomouc cheese curds
- 1 small onion
- 3 tablespoons chopped spring onions or chives
- 50 ml of sunflower oil
- 1 tablespoon full-fat mustard
- crushed cumin
- ground black pepper
- dried chili (optional)
- 1 pinch dried thyme (optional)
- salt to taste
- older bread for toast
- garlic for toast (optional)
METHOD
- Finely chop half of the curds, grate the other half on a coarse grater, the tartare will come together better.
- Finely chop the smaller onions as well as the spring onions or chives.
- Add ground black pepper and cumin, optional chilli and mix well.
- Don’t forget to add a spoonful of mustard and sunflower oil as well.
- Finally, add salt to taste.
- You can serve the tartare immediately, but it will be even better if you let it sit at room temperature for 2 hours.
- Serve on toasted toast, on which you can rub garlic to taste.

Try this delicacy, which goes well with beer or wine. Even those who hate the typical smell of cottage cheese will be pleased, because there is not much to smell here.
INGREDIENTS
- 2 packs of Olomouc cheese curds
- 1 large onion
- 1 package of sun-dried tomatoes in oil
- ground chili to taste
- 100 ml of sunflower oil
- 3 balls of allspice
- 1 bay leaf
- 1 teaspoon ground black pepper
- 1 pinch of salt
- sun-dried tomato oil as needed
METHOD
- Cut the onion into wedges and the sun-dried tomatoes into pieces.
- Heat sunflower oil in a saucepan, add chopped onion, dried tomatoes, ground chili, pepper, allspice, salt, bay leaf, and dried tomato oil.
- Heat on a low heat for about 10 minutes at a temperature of up to 90 °C.
- It must not be fried!
- Leave to cool.
- Cut the cottage cheese into quarters and add to the cooled mixture.
- Mix well.
- Pour into glasses and cover with the remaining oil.
- Seal and refrigerate for at least a week.
- Serve with beer, wine or just as an appetizer for a visit.

Fried cheese from Olomouc
Anyone who hasn’t tasted it has no idea what a treat it is! Prepare coated cottage cheese according to our recipe and we guarantee that you will enjoy it.
INGREDIENTS
- 8 round cheesecakes
- some plain flour
- 1-2 eggs
- breadcrumbs
- oil for deep frying
METHOD
- Beat the eggs with a fork in a bowl.
- Pour the oil into a smaller, deeper saucepan and heat it up.
- There should be enough fat so that the cottage cheese floats when fried.
- First coat the cottage cheese in flour, then in egg and carefully coat in breadcrumbs, even twice.
- Fry gradually in heated oil until golden.
- Serve with potatoes.

Garlic with Olomouc cottage cheese

INGREDIENTS
- 150 g of bacon
- 3 onions
- 3 potatoes
- 1 teaspoon cumin
- salt to taste
- 8 cloves of garlic
- pepper to taste
- a pinch of marjoram
- 250 ml cooking cream
- 4 Olomouc cheeses
METHOD
- Put the bacon in a larger pot, let it fry a little, then add the onion rings and fry until golden.
- Pour 1.5 liters of water.
- Add the cumin and potatoes, season with salt and cook until the potatoes are tender.
- Season the soup with pepper, pressed garlic, marjoram and cover with cream.
- Blend everything together with an immersion blender.
- Put one Olomouc curd in each bowl and cover with garlic soup.
- To taste, you can also decorate with fried bacon.

Toast with cheese spread

INGREDIENTS
- 200 g of fresh gervé cheese
- 100 g of Olomouc cottage cheese
- 2 hard-boiled eggs
- 4 radishes
- 2 tablespoons finely chopped chives
- toasted bread
METHOD
- Wipe the grated cottage cheese with fresh cranberries.
- Add eggs cut into small cubes, grated radishes and mix.
- You can add a little white pepper to your taste.
- However, be careful with the salt, the curds are already salty.
- Toast the bread in a pan or in a toaster.
