- 3 cups whole wheat flour
- 1 cup of butter
- 3/4 cup sugar
- 1/4 cup honey
- 1 egg
- 1 teaspoon ground cardamom
- 1/2 teaspoon of salt

- 1 teaspoon of pure vanilla extract
Method:
- Mix the flour, cardamom, salt and baking soda in a bowl.
- Beat the butter and sugar in a food processor.
- Add honey, eggs and vanilla.
- Continue mixing on medium speed until well combined.
- Add the flour mixture and mix on low speed.
- Divide the resulting dough in half and wrap both parts in cling film and put in the fridge for at least an hour.
- Preheat the oven to 170°C and line the trays with baking paper.
- Roll out the dough on a floured work surface to a thickness of half a centimeter.
- Cut arbitrary shapes with the cutters, repeat the process with the other part of the dough.
- Bake for approximately 11-13 minutes.

Ingredients:
For the seasoning mix
- 4 teaspoons ground cinnamon
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground lemon peel
- 1/2 teaspoon ground orange peel
- 1/2 teaspoon ground aniseed
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon ground fennel seeds
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon ground allspice
- 10 ground cloves
For spiced candy
- 2 cups plain flour
- 7 tablespoons of honey
- 1/4 cup sugar
- 1/4 cup butter
- 1 egg
- zest of 1/2 lemon
- 1 and 1/2 tbsp seasoning mix
- 1/2 teaspoon baking soda
- 1 and 1/2 teaspoons of water
Method:
- First, prepare the seasoning mixture, mix all the spices thoroughly.
- Combine the honey, sugar and butter in a saucepan and heat over a low heat, stirring constantly, until the sugar is completely dissolved.
- Allow to cool to room temperature.
- Add the eggs, lemon zest, baking soda, and spice mix.
- Then gradually add flour and work into a dough.
- Wrap the finished dough in cling film and let it rest in the fridge for at least an hour and a half.
- Knead the dough again.
- On a floured surface, roll out the dough into a sheet approximately half a centimeter thick.
- Preheat the oven to 180°C.
- Cut the dough using molds and place the cookies on a baking sheet lined with baking paper.
- Bake the spiced cookies for approximately 10 minutes or until golden brown.

Christmas stars with cinnamon

Ingredients:
- 3 egg whites
- 300 g ground almonds
- 200 g of powdered sugar
- pinch of salt
- 1/2 teaspoon lemon juice
- 1 teaspoon of vanilla sugar
- 1 teaspoon ground cinnamon
Method:
- First, beat the egg whites with a pinch of salt until stiff.
- Then mix the lemon juice and icing sugar into the snow.
- You should get a nice white mass, the longer you mix the better.
- Put five to six tablespoons of this mixture in a separate airtight container, seal and refrigerate.
- Add the ground almonds, cinnamon and vanilla sugar to the rest of the mixture.
- Work into a dough.

A simple cookie made from only four ingredients that makes the spices stand out, which you don’t have to use only when preparing mulled wine.
Ingredients:
- 1 cup of butter
- 2 cups powdered sugar
- 2 cups plain flour
- 1/4 to 1/2 teaspoon of ground cloves
Method:
- Melt the butter in a small saucepan over low heat.
- Take it off the heat and remove the foam.
- Scoop out the clarified melted butter with a ladle, you should have about three-quarters of a cup of clarified butter.
- Put the clarified butter in the refrigerator for about half an hour until it hardens.
- Preheat the oven to 170°C.
