- ½ teaspoon of salt
For the frosting
- 75 g butter (softened)
- 250 g of all-purpose flour
- 1 teaspoon of vanilla extract
- 1 tablespoon of milk
- Sprinkles (optional)
Method
- Preheat the oven to 180 degrees
- Wipe or empty the cake pan
- Let the spinach simmer in the pot for a few minutes until it wilts
- When it is ready, cool it under cold water
- Drain the water and squeeze out the excess water
- In a bowl, blend the spinach until smooth with a stick blender
- The spinach should have the consistency of mush
- Mix eggs, oil, vanilla, applesauce and sugar well in a bowl
- Then mix everything into the spinach puree
- Sift the flour, baking powder and salt into the spinach mixture
- Mix everything together
- Pour the batter into the prepared pan and bake for 25 minutes or until a skewer comes out clean
- Remove the cake from the oven and place on a wire rack to cool completely
- While the body is cooling, we will prepare the frosting
- Mix all the ingredients for the glaze together
- The frosting must be smooth and fluffy
- If necessary, add a little milk if the frosting is thin or powdered sugar to thicken

Moss cake with spinach

- 400 g of baby spinach
- 3 eggs
- 250 g of powdered sugar
- 200 ml of oil
- 250 g plain flour
- 3 teaspoons of baking powder
- 2 tablespoons of lemon juice

For the cream
- 250 ml whipping cream
- 125 g of mascarpone cheese
- 2 spoons of powdered sugar
- 1 teaspoon of vanilla or lemon extract
Method
- Preheat the oven to 170 degrees
- Grease the cake pan with butter or sprinkle it with flour
- We scald the baby spinach so that it wilts
- Then we blend it into a puree with a stick blender or a food processor
- Beat the eggs with the sugar in a large bowl
- Gradually start adding oil
- Stir the mixture until everything is combined
- Add spinach puree, lemon juice and lemon zest and mix
- Sift the flour and baking powder into the spinach mixture
- Pour the finished dough into the prepared form and bake in the oven
- Bake in the oven for approximately 40-45 minutes until a toothpick comes out clean
- Remove the finished body from the oven and let it cool
- For the cream, mix all the ingredients in a bowl and whisk until smooth
- To assemble the cake, first we flatten the cake by cutting off the bulging top part and keeping it
- Then we halve the corpus into two equal-sized pieces
- Spread the individual layers with mascarpone cream and place them on top of each other
- Spread the rest of the cream over the entire surface of the cake
- Finally, crumble the cut off top piece of the cake and sprinkle the cake with it

No frosting is mentioned in this spinach cake recipe. Therefore, it will be up to you which one you choose. Or you can eat this delicious dessert on its own without any other decorations. It will be great either way.

- 3 large eggs
- 96 g of granulated erythritol (or 100 g of granulated sugar)
- 1 tablespoon avocado oil (or other oil)
- 2 teaspoons of vanilla extract
- 200 g of frozen spinach
- 185 g of unsweetened applesauce
- 75 ml almond milk (or classic semi-skimmed milk)
- 10 g of cocoa
- A teaspoon of yellow food coloring
- 120 g oat flour (or ground flakes)
- 100 g plain flour
- 50 g of starch
- 2 teaspoons of baking powder
- ½ teaspoon of salt
Method
- Preheat the oven to 170 degrees
- Grease the cake tin with butter or line it with baking paper
- Add eggs, sweetener, oil, vanilla extract to the bowl
- Add spinach, applesauce, milk, cocoa and food coloring to a small bowl
- Blend the spinach mixture with a stick blender until smooth
- In a separate bowl, mix oat flour with plain flour, starch and baking powder
- Gradually add the dry ingredients to the spinach mixture, alternating with the egg mixture
- Mix everything thoroughly so that the ingredients are combined and the dough is smooth and thin
- Pour the batter into the prepared mold and bake in the oven
- Bake for about 25 minutes
- Then let the body cool in the mold for 20 minutes and only then transfer it from the mold to a wire rack to cool completely

Savory Spinach Cake
If the sweet recipes did not appeal to you, or you need to muster up a little more courage to try them. So we have prepared a recipe for all cases, which is perhaps a more viable version of this cake, namely its salty version.
What will we need
For the dough
- 250 g plain flour
- 150 g butter (cold cut into slices)
- ½ teaspoon of salt
- 3 tablespoons of cold water
For filling
- 600 g of frozen spinach
- 2 leeks
- 1 bunch of parsley
- 1 tablespoon of oil
- 2 cloves of garlic (pressed)
- 4 eggs
- 125 ml of milk
- 125 ml cream
- 150 g of grated cheese
- Salt
- Pepper
Method
- Preheat the oven to 220 degrees
- Thaw the frozen spinach
- Knead cold and chopped butter with flour, salt and water
- We must have a smooth dough
- Wrap the bowl with the dough in cling film and let it rest in the fridge
- Meanwhile, wash the leeks and parsley
- Cut the leek into rounds and finely chop the parsley
- Heat the oil in a pan and then add the leeks
- Saute the leek in a pan, then add the garlic and let it become fragrant
- Add the spinach to the pan and start frying everything until the liquid from the spinach evaporates
- Remove the pan from the stove and stir in the parsley
- Take the rested dough out of the fridge and roll it out to a size larger than the form in which we will later put it
- Line the bottom of the mold with baking paper and grease the sides with butter
- We press the mold onto the dough and this will show us what size to cut out of the dough
- We put the dough in the mold and make a noodle from the remaining dough, which we line the sides of the mold
- We try to cover them as much as possible
- Prick the dough several times with a fork
- Mix eggs with milk and cream in a large bowl
- Add salt, pepper and stir to dissolve the pepper and salt
- Add the cheese (keep some for sprinkling)
- Add the leek mixture and mix well, everything must be combined
- Pour the mixture into the dough mold and sprinkle with the remaining cheese
- Bake for about 30 minutes
- The filling should be firm, after which the cake can be removed from the oven
- Let cool and serve
