Spinach cake with vanilla

Its taste is downright fantastic, so even the biggest skeptics will have to admit that this spinach dessert is delicious.

What will we need

On the corpus

  1. 150 g of baby spinach
  2. 3 large eggs
  3. 2 teaspoons of vanilla extract
  4. 150 g granulated sugar
  5. 100 g of apple puree
  6. 100 ml of vegetable oil
  7. 250 g plain flour
  8. 3 teaspoons of baking powder
  9. ½ teaspoon of salt

For the frosting

  1. 75 g butter (softened)
  2. 250 g of all-purpose flour
  3. 1 teaspoon of vanilla extract
  4. 1 tablespoon of milk
  5. Sprinkles (optional)


  1. Preheat the oven to 180 degrees
  2. Wipe or empty the cake pan
  3. Let the spinach simmer in the pot for a few minutes until it wilts
  4. When it is ready, cool it under cold water
  5. Drain the water and squeeze out the excess water
  6. In a bowl, blend the spinach until smooth with a stick blender
  7. The spinach should have the consistency of mush
  8. Mix eggs, oil, vanilla, applesauce and sugar well in a bowl
  9. Then mix everything into the spinach puree
  10. Sift the flour, baking powder and salt into the spinach mixture
  11. Mix everything together
  12. Pour the batter into the prepared pan and bake for 25 minutes or until a skewer comes out clean
  13. Remove the cake from the oven and place on a wire rack to cool completely
  14. While the body is cooling, we will prepare the frosting
  15. Mix all the ingredients for the glaze together
  16. The frosting must be smooth and fluffy
  17. If necessary, add a little milk if the frosting is thin or powdered sugar to thicken

Moss cake with spinach

Bring a piece of nature into your home and bake a cake that looks like a pile of freshly picked moss. The cake is just as fluffy and soft. When you bite into it, it’s like falling into moss.

What will we need

On the corpus

  1. 400 g of baby spinach
  2. 3 eggs
  3. 250 g of powdered sugar
  4. 200 ml of oil
  5. 250 g plain flour
  6. 3 teaspoons of baking powder
  7. 2 tablespoons of lemon juice
  8. zest of 1 lemon

For the cream

  1. 250 ml whipping cream
  2. 125 g of mascarpone cheese
  3. 2 spoons of powdered sugar
  4. 1 teaspoon of vanilla or lemon extract


  1. Preheat the oven to 170 degrees
  2. Grease the cake pan with butter or sprinkle it with flour
  3. We scald the baby spinach so that it wilts
  4. Then we blend it into a puree with a stick blender or a food processor
  5. Beat the eggs with the sugar in a large bowl
  6. Gradually start adding oil
  7. Stir the mixture until everything is combined
  8. Add spinach puree, lemon juice and lemon zest and mix
  9. Sift the flour and baking powder into the spinach mixture
  10. Pour the finished dough into the prepared form and bake in the oven
  11. Bake in the oven for approximately 40-45 minutes until a toothpick comes out clean
  12. Remove the finished body from the oven and let it cool
  13. For the cream, mix all the ingredients in a bowl and whisk until smooth
  14. To assemble the cake, first we flatten the cake by cutting off the bulging top part and keeping it
  15. Then we halve the corpus into two equal-sized pieces
  16. Spread the individual layers with mascarpone cream and place them on top of each other
  17. Spread the rest of the cream over the entire surface of the cake
  18. Finally, crumble the cut off top piece of the cake and sprinkle the cake with it
  19. This way we get a mossy effect

Spinach cake with mascarpone

The sweet fluffy body together with the delicious cream will not let you stop and the cake will disappear in the blink of an eye. The recipe is very simple and anyone can do it.

What will we need

On the corpus

  1. 450 g of fresh baby spinach
  2. 250 g of granulated sugar
  3. 150 ml of oil
  4. 250 g plain flour
  5. 2 teaspoons of baking powder

For the cream

  1. 250 g of mascarpone
  2. 200 ml whipping cream
  3. 4 teaspoons of powdered sugar

For decoration

  1. 150 g of currant jam
  2. raspberries, pomegranate, blueberries


  1. We scald the fresh spinach so that it wilts
  2. Then we mix it with a hand blender into a smooth puree
  3. Preheat the oven to 180 degrees
  4. Grease the cake tin with butter or line it with baking paper
  5. In a large bowl, mix the eggs with the sugar to make the mixture fluffy
  6. Add the spinach puree and mix again
  7. Sift the flour and baking powder into the spinach mixture and work it in carefully
  8. The dough must not be lumpy
  9. Then pour the dough into the prepared mold and bake for 40 minutes
  10. Whip the cream on top of the cream so that it has a firm consistency
  11. Add mascarpone and sugar and mix
  12. Allow the spinach body to cool and then spread it with mascarpone cream

Green cake

No frosting is mentioned in this spinach cake recipe. Therefore, it will be up to you which one you choose. Or you can eat this delicious dessert on its own without any other decorations. It will be great either way.

What will we need

  1. 3 large eggs
  2. 96 g of granulated erythritol (or 100 g of granulated sugar)
  3. 1 tablespoon avocado oil (or other oil)
  4. 2 teaspoons of vanilla extract
  5. 200 g of frozen spinach
  6. 185 g of unsweetened applesauce
  7. 75 ml almond milk (or classic semi-skimmed milk)
  8. 10 g of cocoa
  9. A teaspoon of yellow food coloring
  10. 120 g oat flour (or ground flakes)
  11. 100 g plain flour
  12. 50 g of starch
  13. 2 teaspoons of baking powder
  14. ½ teaspoon of salt


  1. Preheat the oven to 170 degrees
  2. Grease the cake tin with butter or line it with baking paper
  3. Add eggs, sweetener, oil, vanilla extract to the bowl
  4. Add spinach, applesauce, milk, cocoa and food coloring to a small bowl
  5. Blend the spinach mixture with a stick blender until smooth
  6. In a separate bowl, mix oat flour with plain flour, starch and baking powder
  7. Gradually add the dry ingredients to the spinach mixture, alternating with the egg mixture
  8. Mix everything thoroughly so that the ingredients are combined and the dough is smooth and thin
  9. Pour the batter into the prepared mold and bake in the oven
  10. Bake for about 25 minutes
  11. Then let the body cool in the mold for 20 minutes and only then transfer it from the mold to a wire rack to cool completely

Savory Spinach Cake

If the sweet recipes did not appeal to you, or you need to muster up a little more courage to try them. So we have prepared a recipe for all cases, which is perhaps a more viable version of this cake, namely its salty version.

What will we need

For the dough

  1. 250 g plain flour
  2. 150 g butter (cold cut into slices)
  3. ½ teaspoon of salt
  4. 3 tablespoons of cold water

For filling

  1. 600 g of frozen spinach
  2. 2 leeks
  3. 1 bunch of parsley
  4. 1 tablespoon of oil
  5. 2 cloves of garlic (pressed)
  6. 4 eggs
  7. 125 ml of milk
  8. 125 ml cream
  9. 150 g of grated cheese
  10. Salt
  11. Pepper


  1. Preheat the oven to 220 degrees
  2. Thaw the frozen spinach
  3. Knead cold and chopped butter with flour, salt and water
  4. We must have a smooth dough
  5. Wrap the bowl with the dough in cling film and let it rest in the fridge
  6. Meanwhile, wash the leeks and parsley
  7. Cut the leek into rounds and finely chop the parsley
  8. Heat the oil in a pan and then add the leeks
  9. Saute the leek in a pan, then add the garlic and let it become fragrant
  10. Add the spinach to the pan and start frying everything until the liquid from the spinach evaporates
  11. Remove the pan from the stove and stir in the parsley
  12. Take the rested dough out of the fridge and roll it out to a size larger than the form in which we will later put it
  13. Line the bottom of the mold with baking paper and grease the sides with butter
  14. We press the mold onto the dough and this will show us what size to cut out of the dough
  15. We put the dough in the mold and make a noodle from the remaining dough, which we line the sides of the mold
  16. We try to cover them as much as possible
  17. Prick the dough several times with a fork
  18. Mix eggs with milk and cream in a large bowl
  19. Add salt, pepper and stir to dissolve the pepper and salt
  20. Add the cheese (keep some for sprinkling)
  21. Add the leek mixture and mix well, everything must be combined
  22. Pour the mixture into the dough mold and sprinkle with the remaining cheese
  23. Bake for about 30 minutes
  24. The filling should be firm, after which the cake can be removed from the oven
  25. Let cool and serve
