Spinach pancakes are a popular savory version of this dish.
INGREDIENTS:
Dough:
- 60 g plain flour
- 65 g spelled flour
- 1 egg
- 300 ml of milk
- pinch of salt
- frying oil
Filling:
- 1 tablespoon of olive oil
- 1 small onion
- a handful of mushrooms
- 2 handfuls of baby spinach
- 2 spoons of sour cream
- fresh parsley
- salt and pepper
METHOD:
- Prepare the dough by mixing eggs with a pinch of salt, adding milk and whisking again.
- Finally, add the flour and mix.
- Fry the pancakes on both sides in the heated oil.
- Heat the oil in a second pan, fry the finely chopped onion. Then add sliced mushrooms and sauté gently.
- For the last two minutes, add baby spinach, salt and pepper.
- Serve filled with flavored sour cream and mushroom-spinach mixture.
