  • 60 g plain flour
  • 65 g spelled flour
  • 1 egg
  • 300 ml of milk
  • pinch of salt
  • frying oil


  • 1 tablespoon of olive oil
  • 1 small onion
  • a handful of mushrooms
  • 2 handfuls of baby spinach
  • 2 spoons of sour cream
  • fresh parsley
  • salt and pepper


  • Prepare the dough by mixing eggs with a pinch of salt, adding milk and whisking again.
  • Finally, add the flour and mix.
  • Fry the pancakes on both sides in the heated oil.
  • Heat the oil in a second pan, fry the finely chopped onion. Then add sliced mushrooms and sauté gently.
  • For the last two minutes, add baby spinach, salt and pepper.
  • Serve filled with flavored sour cream and mushroom-spinach mixture.

  • 1 ripe avocado
  • 340 g of cherry tomatoes

  • 120 g plain flour
  • pinch of salt
  • 2 eggs
  • 300 ml of milk
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon of oil


  • 1 tablespoon of butter
  • 1 tablespoon of oil
  • 1 small onion
  • 200 g of spinach
  • 200 g semi-fat cottage cheese
  • zest of half a lemon
  • a pinch of nutmeg
  • salt
  • pepper
  • 6 spoons of grated parmesan cheese


  • Mix the ingredients for the dough and let it rest for 30 minutes.
  • Then fry the pancakes in a little oil on both sides.
  • Prepare the filling by mixing cottage cheese with lemon zest, salt and pepper.
  • Finely chop the onion and let it fry until golden, then add the spinach, nutmeg and fry briefly.
