Method:

  • Drop the spinach leaves into the boiling water for 1 minute, then pull them out and transfer them to the ice water. Pull it out immediately and blend it in a blender to a smooth puree.
  • Heat the butter, add the garlic and flour, make a stew (sauté for about 1 minute).
  • Then add the spinach puree and mix.
  • Add water, milk, salt, pepper and bring the mixture to a boil.
  • Bring the soup to a boil and add a beaten egg at the end.
  • Serve garnished with croutons.

Method:

  • Chop the onion, press the garlic.

Method:

Spinach cream with parmesan croutons

Ingredients:

  • 3 leeks
  • 5 small potatoes
  • 4 cups baby spinach
  • 4 cups stock or water
  • 2 tablespoons of olive oil or ghee
  • salt and pepper to taste

To serve:

  • 6 spoons of whipping cream

For the croutons:

  • 1 slice of toasted bread
  • 1 tablespoon of grated parmesan

Method:

  • Cut off the white and light green parts of the leeks and cut them into rounds.
  • Peel the potatoes and cut them into cubes.
  • Fry the potatoes together with the leek in hot oil or butter (5 minutes).
  • Then cover with broth or water and cook for 20 minutes until the potatoes are soft.
