Spring potato salad

Potato salad does not have to be served only at Christmas, but also in its lighter version in the spring.

What will we need

  • 1 kg of small red potatoes
  • 3 tablespoons extra virgin olive oil, divided
  • 60 ml of lemon juice
  • A handful of mint, finely chopped
  • 2 tablespoons of minced shallot
  • 2 teaspoons Dijon mustard
  • Salt and pepper to taste
  • 250 g arugula
  • 150 g of peas

Method

  • Cook the potatoes in a large pot of boiling salted water for 10 to 15 minutes until tender.
  • Drain and let cool.
  • Cut the potatoes in half and transfer to a large bowl.
  • Add 2 tablespoons of oil and mix.
  • Grill the potatoes in a pan for 3 to 5 minutes.
  • In a small bowl, whisk together the remaining oil, lemon juice, mint, shallots, and Dijon.
  • Season with salt and pepper.
  • Mix potatoes, arugula, peas and dressing.

Carrot salad with spring onion

Crispy and light spring salad recipe.

What will we need

  • 500 g carrots, chopped
  • 150 g of chopped spring onions
  • 100 g fresh parsley, roughly chopped
  • 3 tablespoons of extra virgin olive oil
  • 2 tablespoons of red wine vinegar
  • Coarse salt and freshly ground pepper
  • 1/2 lemon juice

Method

  • Combine carrot, onion and parsley in a large bowl.
  • Mix the oil and vinegar and season with salt and pepper.
  • Let it rest for 1 hour.
  • Squeeze the lemon before serving.

Spring cucumber salad with radishes

There is so much to love about this cucumber salad. It’s easy to make, uses the simplest of ingredients and is full of fresh flavor.

What will we need

  • a bunch of small fresh radishes
  • 1 salad cucumber
  • lollo rosso salad
  • extra virgin olive oil
  • 1 teaspoon of lemon juice

Method

  1. Wash the radishes and cucumber thoroughly, trim the ends and cut them into thin slices.
  2. Wash the salad as needed, dry it thoroughly and tear it into smaller bunches.
  3. Mix everything in a large bowl, add a spoonful of olive oil and lemon juice.
  4. Serve chilled.

Spring tomato salad with basil and pumpkin seeds

What will we need

  • 10 medium tomatoes
  • pumpkin seeds – they will taste better roasted
  • basil leaves
  • bread croutons (preferably pumpkin bread)
  • olive oil
  • balsamic vinegar or reduction
  • salt pepper

Method

  1. Cut the tomatoes and put them in a bowl.
  2. Add pumpkin seeds, torn basil leaves, cover with olive oil.
  3. Season with salt and pepper, balsamic vinegar
