Strawberry cake with mascarpone

You can try this nude cake with mascarpone and strawberries. Even a complete beginner can handle the recipe, so go for it!

Ingredients for the body

  • 240 g plain flour
  • 250 g of granulated sugar
  • 6 eggs
  • 3 tablespoons of oil
  • 1/2 baking powder
  • 1 teaspoon of vanilla extract
  • pinch of salt

Ingredients for the filling

  • 500 g mascarpone
  • 250 ml whipping cream
  • 4 tablespoons of powdered sugar
  • 1/2 teaspoon of vanilla extract
  • Strawberry jam

  • First, preheat the oven to 180°C.
  • Separate the whites from the yolks into two bowls. Beat the egg whites with a pinch of salt for about two minutes. After two minutes, beat in the granulated sugar, increase the speed and beat until stiff. It can take up to 10-15 minutes for the snow to have a really good consistency.
  • In another bowl, beat the egg yolks with oil and vanilla extract, then work them into the prepared snow with a wooden spoon.
  • Sift the flour and baking powder into the mixture and mix thoroughly with a spatula.
  • Line the cake form with baking paper and pour the resulting dough inside. Leave to bake for about 40 minutes, but test with a skewer to see if the body is ready. Then let it cool completely.
  • Using a thin knife, cut around the perimeter of the cake to remove the body from the mold. Then divide the carcass either with a knife or with a thread into 3 equal parts.
  • Mix mascarpone with icing sugar and vanilla extract in a bowl. In a separate bowl, whip the cream until stiff and then mix it with the mascarpone mixture.
  • Spread the first layer of the crust with strawberry jam and then apply a layer of cream. Place sliced strawberries on top of the cream.
  • Spread the second sheet with cream and place the smeared side on the layer of strawberries on the first sheet of the corpus. Then spread the other side with marmalade again, then with cream and place the strawberries again.
  • Smear the last sheet with cream again, fold the other side onto the layer of strawberries on the previous sheet of the corpus. This is how your cake is assembled.
  • Brush the sides of the cake with the remaining cream, then the top of the cake and refrigerate for at least an hour so that the cream hardens nicely.
  • Then decorate the finished cake with fresh strawberries according to your imagination and you are done.

Everyone will love this quick and easy strawberry shortcake. It is not only easy, but also very attractive for children thanks to the gelatin. Bake it for a children’s party, for example.

Ingredients for the body

  • 100 g semi-coarse flour
  • 100 g of granulated sugar
  • 100 g room temperature butter
  • 3 eggs
  • 2 teaspoons of baking powder
  • 1 package of vanilla sugar

Cream ingredients

  • 400 ml of semi-skimmed milk
  • 1 package of vanilla pudding
  • 2 tablespoons of granulated sugar

Ingredients for the filling

  • 500 g of fresh/compote strawberries
  • 2 packages of jelly powder
  • 500 ml of water
  • 3 tablespoons of granulated sugar


  • First, preheat the oven to 180°C.
  • Mix flour with baking powder in a bowl, add sugar, vanilla sugar, softened butter and eggs. Then beat with an electric hand mixer for about 2 minutes. Pour the resulting dough into a greased and lined cake tin.
  • Bake for about 20 minutes, in an electric oven at 180 °C and in a fan oven at 160 °C.
  • Then let the body cool completely and transfer it to a plate, where you will then decorate and fill it. Place a washed cake pan around the body so that everything holds and hardens where it should.
  • You make the cream by cooking the pudding with 400 ml of milk and sugar according to the instructions. Then let it cool for about 15 minutes and then spread it on the cooled body. Allow to cool completely.
  • Meanwhile, cut the strawberries into slices and arrange them in circles on the custard cream. Then you prepare the cake jelly with water and sugar according to the instructions, pour it over the strawberries and let it set completely.
  • After it hardens, use a knife to loosen the edge of the mold and remove it from the cake. You are done.

No-bake cake with strawberries

You will love this sponge cake with strawberry cream cheese. It is not only quick, but also very tasty. Everyone can definitely do it!


  • 240 g of biscuits
  • 4 tablespoons of powdered sugar
  • 500 ml whipping cream
  • 3 pieces of soft cottage cheese (in a bag)
  • 2 pieces of vanilla sugar
  • 1 cup of brewed coffee (to taste)
  • 500 g of strawberries


  • In a large bowl, mix the cottage cheeses, cream and sugar. You can help yourself with a hand whisk.
  • You can dip the biscuits in brewed coffee, but you don’t have to. Gradually fold them into the cake pan.
  • Spread the cottage cheese filling on the sponge cake and top with sliced strawberries. Continue in this way – sponge cakes, cottage cheese filling, strawberry slices.
  • Let the resulting cake harden in the fridge and serve.

Ingredients for the body

  • 200 g semi-coarse flour
  • 200 g of granulated sugar
  • 4 eggs
  • 3 tablespoons of hot water or milk
  • pinch of salt

Ingredients for the filling

  • 500 ml whipping cream
  • 250 g of mascarpone
  • 40 g of powdered sugar
  • 1/2 teaspoon of vanilla extract
  • 500 g of strawberries
  • marmalade (for spreading the body – strawberry, raspberry, currant)


  • Line the cake tin with baking paper. Preheat the oven to 165°C.
  • Beat eggs with sugar and a pinch of salt in a bowl. Beat for about 10 minutes.
  • Then, stirring constantly, add 3 tablespoons of water or milk and beat for another 3 minutes.
  • Then add the sifted flour in three batches.
  • Pour the resulting dough into the prepared lined cake tin and bake for 40-45 minutes.
  • After baking, let it cool completely and in the meantime prepare the filling.
  • In a bowl, mix the mascarpone with the cream and sugar and beat until the mixture is stiff enough.
  • Cut the body into two parts. Spread the first layer with marmalade and a little cream. Place the sliced strawberries and the cream again.
  • Fold in the second part of the body, spread with cream and decorate the top with strawberries. And you’re done.

  • 2 cups crushed cookies
  • 5 spoons of sugar
  • 6 tablespoons of melted butter

Ingredients for the filling

  • 500 g of cottage cheese in a tub
  • 1/2 cup powdered sugar
  • 1/2 cup sour cream
  • 2 teaspoons of vanilla extract
  • 4 eggs

Ingredients for the frosting

  • 500 g of fresh strawberries
  • 3 spoons of sugar
  • 1/4 cup of water
  • 1/2 teaspoon of vanilla extract


  • Preheat the oven to 180°C.
  • In a bowl, mix the crushed cookies with the sugar and melted butter.
  • Spread the biscuit mixture on the bottom of a cake tin lined with baking paper and press it in all places. Bake for 7 minutes, then remove and set aside.
  • In a large bowl, mix the cottage cheese with the sugar, sour cream and vanilla extract to combine.
  • Then mix the eggs into the cottage cheese mixture so that the filling is smooth.
  • Pour the filling on top of the baked cookie layer, smooth and bake for 30 minutes. Then reduce the temperature to 150°C and bake for another 45 minutes.
  • After baking, turn off the oven and leave the cheesecake inside for another 30 minutes. Then let it cool completely and put it in the fridge.
  • To make the strawberry frosting, cut up half of the strawberries and place them in a small saucepan. Sprinkle them with sugar and cover with water. Bring the mixture to a boil and cook gently for about 10 minutes.
  • Then remove from the heat and stir in the vanilla extract. Finally, pour the mixture into a blender and blend until smooth. Let the frosting cool.
  • Stack the other half of the strawberries on top of the cooled cheesecake. Top with strawberry frosting and you’re done.

How to make strawberry cream for a cake?

You will need:

250 g of butter

4 tablespoons of powdered sugar

1 can of compote strawberries

1 strawberry pudding powder

The procedure is quite simple. Just mix the strawberries with the juice. Then you add the custard, bring it to a boil and you get a thick base for the cream. Leave it to cool and in the meantime whip the butter and sugar into a foam. Finally, mix this butter mixture into the fruit pudding and you’re done.

It is better to let the cream sit for at least an hour or two in the fridge and then you can spread it on any cake body. And the celebration can begin. 🙂
