Homemade strawberry ice cream

Strawberry ice cream is one of the most popular flavors! Prepare our homemade version, which is creamy, delicious and made from fresh ingredients. As well as these homemade popsicles of various flavors. And you can also refresh yourself with light homemade lemonades .

What will we need

  • 300 g strawberries (peeled and diced)
  • 2 spoons of honey
  • 40 g of granulated sugar
  • 1 teaspoon of lemon juice
  • 250 ml thick whipping cream
  • 1 teaspoon of vanilla extract

Method

  • In a large bowl, combine the strawberries, honey, sugar and lemon juice. Let sit for 15-20 minutes until the strawberries release their juices.
  • Mash the mixture with a potato masher until no large chunks of strawberries remain.
  • Add thick cream and vanilla extract to the strawberries. Mix until combined.
  • Pour the mixture into an airtight container for 3-4 hours to thicken slightly.
  • For best results, let the ice cream sit at room temperature for about 5-10 minutes to soften before serving.

Fresh strawberry ice cream

Use sweet seasonal strawberries to make this delicious strawberry ice cream recipe. It’s great on its own or as a side dish to summer desserts like this Crispy Apple Crumble .

What will we need

  • 400 g of strawberries
  • 1-2 teaspoons of lemon juice
  • 600 ml of heavy cream
  • 300 ml of whole milk
  • 150 g of white powdered sugar
  • 5 egg yolks
  • 2 teaspoons of vanilla extract

Method

  • Place the strawberries in a food processor or blender.
  • Blend to a puree, then add lemon juice to taste – if the strawberries are tart enough, you’ll only need a little.
  • Heat the cream and milk in a pan until boiling.
  • Beat the sugar and egg yolks in a bowl until pale yellow.
  • Slowly pour the hot cream mixture into the eggs and whisk.
  • Once fully incorporated, drain through a strainer back into the pan.
  • Cook gently over a moderate heat until the mixture thickens slightly. Be careful not to overcook it.
  • Transfer to a bowl. Cover and cool at room temperature for 10 minutes, then refrigerate for 1 hour.
  • Mix the strawberry puree and vanilla into the cold pudding from the fridge. Taste and season.
  • Freeze the ice cream in an ice cream maker or container in the freezer.

If you don’t have an ice cream maker, freeze for 4 hours, whisking or blending thoroughly every hour in a food processor to remove ice crystals.
It will last up to two months in the freezer.

  • 250 g frozen chopped strawberries
  • 60 g of sugar
  • 160 ml of heavy cream

Method

  • Combine the frozen strawberries and sugar in a food processor or blender. Process until the strawberries are coarsely chopped.
  • With the mixer on, slowly pour in the heavy cream until incorporated.
  • Store in the freezer for up to 1 week.
