  • 2 medium-sized apples
  • 3 tablespoons of sour cream

  • 1 tablespoon fresh lemon juice
  • Salt as needed


  • Cut the ermine into fine pieces and place in a bowl.
  • Peel the apples, remove the cores, grate and add to the ermine.
  • Mix best by hand and add sour cream.
  • Season with pepper, drizzle with lemon juice and add grated horseradish.
  • Add salt as needed and mix thoroughly at the end.

  • 1 package of cream processed cheese
  • 1 bunch of spring onions
  • 1 large carrot
  • 1 stalk of celery stalks
  • 1/2 red pepper
  • 1 small red onion
  • 2 tablespoons of chives
  • 1 tablespoon of dill
  • 1 – 2 cloves of garlic


  • Cut the spring onion into slices, pepper, carrot, celery and red onion into cubes.
  • Chop the dill and chives and press the garlic after peeling.
  • Put the melted cheese and all other ingredients into the bowl of a food processor/mixer.
  • Mix with the pulse button until the mixture is a little thick, with pieces of vegetables and at the same time nice and soft.
  • The finished spread is preferably transferred to a glass container, covered with a plastic lid and stored in the refrigerator.

Vegetable mixture with a lemon scent

If you are planning a party with good food for your child and you need something simple and good for sandwiches, canapés or even sandwiches, then this summer spread is a great choice.


  • 2/3 cup grated carrots
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped onion
  • 1/4 cup chopped salad cucumbers.
  • 1/4 cup chopped celery
  • 1 package of processed cream cheese
  • 1/4 teaspoon salt
  • 2 tablespoons of lemon juice
  • 1 1/2 spoons of mayonnaise (can also be sour cream or yogurt)


  • We start by cleaning all the vegetables.
  • Grate the carrots, cut the peppers, onions, cucumbers and celery into fine pieces.
  • Put the vegetables in a bowl and mix.
  • In another bowl, mix melted cheese, salt, lemon juice and mayonnaise.
  • Beat well so that the mixture is nice and fluffy.
  • Add the vegetables and mix thoroughly.
  • Cover the bowl with cling film and refrigerate for 1 hour before serving.

This recipe is one of the light summer spreads that are ideal as a snack or a small dinner. If you’re not in the mood for anything with meat, it will definitely fill you up perfectly.


  • 2 packs of ham flavored cream cheese
  • 3 cups of grated zucchini
  • 3 stalks of celery stalks
  • 1/4 cup black olives
  • 1/4 cup green olives
  • 8 cloves of garlic
  • 1 small red onion
  • 2 tablespoons fresh coriander
  • 2 tablespoons fresh lime juice
  • 2 tablespoons of chives
  • 2 tablespoons of olive oil
  • 1 bunch of spring onions
  • 1/4 teaspoon white pepper
  • Salt to taste


  • Clean and cut the celery, olives, onion and spring onions.
  • Place in a bowl and add crushed garlic and zucchini.
  • Chop the cilantro and add to the bowl.
  • Unwrap the individual pieces of processed cheese and throw them into a bowl.
  • Drizzle with olive oil, lemon juice, salt and pepper and mix everything thoroughly.
  • As soon as the ingredients are well combined, let it sit in the fridge for at least 4 hours (but preferably overnight).
  • It is best served on a French baguette or maybe a Kaiser.

Egg spread with homemade mayonnaise

A refreshing summer spread should contain only tasty ingredients that refresh, caress the taste buds and are not difficult for our digestion.


  • 6 cups of water
  • 2 tbsp + 1/2 tsp salt
  • 1 stalk of celery stalks
  • 1/2 cup white vinegar
  • 4 eggs
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon of red wine vinegar
  • 1 teaspoon of hot sauce
  • 1 teaspoon chopped fresh chives
  • 1/2 teaspoon coarsely ground black pepper


  • Prepare a large bowl, fill it with ice and cold water.
  • Pour 6 cups of water and 2 tablespoons of salt into a deep pot. Set a higher temperature and bring to a boil.
  • Add the celery and cook for 2 minutes. We take it out and immediately immerse it in an ice bath.
  • Take out and clean the outer layer of celery using a peeler.
  • Pour vinegar into a pot of hot water and let it boil again.
  • Add the eggs and cook for 8 minutes.
  • We also take them out of the pot and immerse them in a bowl of ice water.
  • Once the eggs have cooled enough, peel them and separate the whites from the yolks.
  • Cut the egg whites into fine cubes and set aside.
  • Put the yolks in a bowl and mash with a fork. Add mayonnaise, mustard, red wine vinegar and hot sauce.
  • Cut the celery into small pieces and add half to the yolks.
  • Stir in chives, black pepper and 1/2 teaspoon of salt, mix and we’re done.
  • We will use the chopped egg whites and the remaining celery for decoration.

Pea and Coriander Dip

Preparing a summer spread is a simple, yet important process. Especially if you are preparing it for your loved ones, friends or work colleagues.


  • 200 g of fresh peas
  • 1/4 cup lemon juice from a chemically untreated lemon
  • 2 tablespoons of olive oil
  • 1 medium white onion
  • 1 – 2 cloves of garlic
  • 1 teaspoon ground dried coriander
  • 1 cup fresh coriander leaves
  • 1/2 teaspoon of salt
  • 6 cups of water
  • 1/4 teaspoon ground black pepper


  • Put peas, 1 tablespoon of lemon juice, 1/2 teaspoon of salt and water in a pot.
  • Bring to a boil and cook on medium-low heat for about 30 minutes until the peas are soft.
  • Then strain and rinse with cold water.
  • Pour the peas into the bowl of a food processor, add the remaining lemon juice and blend to a coarse paste.
  • Heat the olive oil in a pan over medium-low heat.
  • Clean the onion, cut it into cubes, peel the garlic and cut it into slices.
  • Throw in the pan, add the dried coriander and fry in the pan for about 1 minute.
  • Set aside and let cool for 5 minutes.
  • Add fresh coriander leaves, cooled onion mixture to the peas and mix.
  • Add salt, pepper and mix thoroughly again.
  • If the spread is too thick, add 1-2 tablespoons of boiling water and mix.
  • Served with fresh bread and vegetables.

All summer spreads, which have vegetables as the main ingredient, are an ideal addition to any menu, whether you are thinking of something good for a snack, lunch or as a treat at a garden party.


  • 1 bunch of radishes
  • 2 cloves of garlic
  • 1 package of cream cheese
  • 1/2 cup Feta cheese
  • 1/4 cup freshly grated Parmesan
  • 1 tablespoon of extra virgin olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground white pepper


  • Clean the radishes and garlic and put them in the blender jar.
  • Mix well and add cream cheese, feta and parmesan. We mix a little again.
  • Add olive oil, salt and pepper and mix for 1 minute at the highest speed.
  • Serve with crackers or fresh bread.

Tip: If we want a slightly healthier version, we cut different kinds of vegetables into slices and then serve the spread on them.

This summer spread is refreshing, easy and light. It is perfect as a small snack during the summer months, but also as a spring dinner.


  • 1 large ripe avocado (you can find it in the store as Ready to eat)
  • 3 tablespoons of extra virgin olive oil
  • 1-2 tablespoons of fresh lemon juice
  • 2 – 3 cloves of garlic
  • Sea salt to taste
  • 1/8 teaspoon ground black pepper


  • Cut the avocado in half, remove the pit and scoop out the skin with a spoon.
  • Place in a blender, add olive oil, lemon juice and blend.
  • Add peeled and pressed garlic, salt and pepper and mix on medium speed for about 1 minute.
  • After that, season as needed, transfer to a bowl and put in the fridge for 30 minutes.
  • Served on a sandwich, baguette or as a canapé with a piece of cheese.

It is perhaps not necessary to introduce this popular recipe, but each one is different and perhaps this one will interest you more than the one you normally prepare.

  • 250 g of cottage cheese
  • 1 medium yellow onion
  • 125 g of butter
  • 1 teaspoon ground sweet pepper (if you like more, you can add 2 teaspoons)
  • 1 level teaspoon of ground cumin
  • 1 – 2 tablespoons of sour cream
  • Salt to taste


  • Clean the onion, cut it into cubes and put it in a bowl.
  • Add cottage cheese and butter, which we let soften at room temperature.
  • Mix thoroughly and add the remaining ingredients.
  • Add salt to taste and mix carefully at the end.
  • Put in the fridge and let it rest for at least 4 hours so that all the flavors combine.
  • Served on a crispy bun, baguette, toasted bread or maybe with crackers.
