Ingredients
Dough:
- 500 g of flour
- 1 pinch of salt
- 50 g of powdered sugar
- 7 g of dry yeast
- 50 g butter (melted)
- 250 ml of milk
- 8 plums (pitted)
Glaze:
- 100 g of powdered sugar
- 50 g butter (melted)
Method
- Mix the flour, salt, sugar and yeast in a bowl. Add butter and milk to the mixture.
- Mix everything well to combine all the ingredients to form a dough. Add a little more milk if needed.
- Turn the finished dough onto a floured surface and knead for about 10 minutes until it is soft and smooth.
- Place the dough in a lightly oiled bowl and cover with cling film. The dough will rise in about 1.5-2 hours.
- Turn the risen dough out onto a floured surface and roll it into a snake shape.
- Then cut it into 16 equal pieces. Try to keep the individual pieces the same size.
- Form a ball from each piece and place it on a baking sheet lined with baking paper. Always leave a 3cm gap between the balls, as the dough will expand slightly to the sides during baking.
- Using the handle of a rolling pin, or similar shaped tool, make a well in the center of each ball and place half of the plum inside.
- Cover the tray with cling film and leave to stand for an hour.
- Preheat the oven to 200°C and bake for 15 minutes until the buns start to turn golden and the plums soften.
- Allow the buns to cool before frosting them.
- The topping is simple. Mix the sugar with a little water and stir until the sugar dissolves. Add the butter to it and mix. Pour this glaze over the buns.

Ingredients
Dough:
- 480 g of flour
- 200 ml of milk
- 50 ml of water
- 1 tablespoon of sugar
- 4 tablespoons of vegetable oil
- 1 teaspoon of yeast
- 250 g of cottage cheese
- 1 egg
- 3 tablespoons of sugar
- 1 piece of vanilla pudding
Baby girl:
- 4 tablespoons of sugar
- 5 tablespoons of flour
- 50 butter (at room temperature)

Method
- Pour the flour into the bowl. In a separate bowl, mix the milk with warm water and add the mixture to the flour.
- Then add the rest of the ingredients (keep the cottage cheese aside), mix everything and knead the dough. It should be soft and not too thick.
- Place the finished dough in a bowl greased with vegetable oil and cover with food foil. Let rest, in a warm place, for 50-60 minutes.
- While the dough is resting, prepare the crumble.
- Mix the sugar with the flour and butter and, using your hands, create crumbs, which you put aside to cool in the refrigerator.
- As soon as the dough is ready, put it on a rolling pin, smeared with vegetable oil and divide it into 12 equal pieces (1 piece should weigh about 70-75 g).
- Remove the pits from the plums and cut each plum into 4 equal pieces.
- From each piece of dough, roll out a 12-13 cm diameter pancake and place a piece of cottage cheese and two halves of a plum in its center. Continue like this for all pieces of dough.
- Lift the edges of the pancake upwards and join the upper parts together. You will have small buns.
- Place the buns in an oiled baking pan and cover with a clean tea towel. Let stand for 10-15 minutes.
- Then cover everything with the crumbs that you have ready in the fridge.
- Bake in a preheated oven at 180°C for 30-35 minutes. After baking, remove everything and cover with food foil. Leave covered for 10 minutes.
- Then remove the foil, let the plum buns with cottage cheese cool on the cooling rack and serve.

Poppy seed bun with plums
This recipe is exceptional in that it contains not only delicious plums, but also the sweet taste of marzipan.

Dough:
- 500 g of flour

- 70-80 g of sugar
- 1 egg
- 80 g butter (softened)

Poppy and marzipan filling:
- 200 g of ground poppy seeds

- 100 g butter (melted)
- 2 tablespoons of rum
- 100 g of sugar
- 2 large eggs + 1 egg yolk
- 150-200 g of marzipan
- 7 plums (pitted and cut into small pieces)
- 1 egg (beaten with a pinch of salt and a pinch of sugar)
Rum Topping:
- 150 g of powdered sugar
- 1 tablespoon of milk
- 2 tablespoons of rum
- 1 drop of almond extract
Method
Dough:
- Mix the flour and salt in a bowl.
- Heat the milk to lukewarm, add the sugar, yeast, eggs and almond extract. Mix everything.
- Add this mixture to the flour and knead the dough.
- Add the butter piece by piece and knead for another 5-7 minutes. You can use a kneading machine.
- The dough should be soft, smooth and elastic.
- Shape the dough into a ball, brush with a little oil and leave to rise in a lightly oiled, covered bowl. The dough should double in size.
- If you have time, you can store the covered bowl in the refrigerator overnight.
Poppy and marzipan filling:
- Mix finely ground poppy seeds, cinnamon, melted butter, sugar and rum in a bowl.
- Cut the marzipan into pieces and add the eggs. Beat until smooth using a mixer. If the marzipan is too thick, add another egg yolk.
- Once the dough has risen, roll it into a large rectangle and spread the poppy-marzipan filling on top.
- Sprinkle the entire surface with plums and roll into a roll.
- Cut the roll into 12 pieces with a serrated knife and place cut side down on the prepared tray lined with baking paper.
- Cover and let rest for 35 minutes.
- Now place in the oven, preheated to 180°C and bake for 30-35 minutes until the poppy-plum buns are ready.

Cast bun with plums

- 250 g of flour
- 16 g of fresh yeast
- 100-150 ml milk (lukewarm)
- 1 egg
- 30 g of sugar
- 35 g of melted butter
- 1 pinch of salt
- 4-5 plums (pitted and halved or quartered)
- 8 sugar cubes
Method
- Sift the flour into a bowl and make a well in the middle.
- Mix the yeast with 2 tablespoons of warm milk. Once the yeast has dissolved, pour the mixture into the well in the flour. Cover the hole with flour and let stand for 10-15 minutes.
- Add the rest of the ingredients (except the plums and cubed sugar) to the flour and make a smooth dough.
- Cover the bowl and let the dough rest in a warm place for 1-2 hours until doubled in size.
- Then knead and let it rest again for a few minutes to loosen the dough.
- Divide the dough into 8 equal pieces and shape each piece into a ball.
- Roll out each ball and place a sugar cube and cut plum quarters in the middle. Then fold the dough – you will create a small package.
- Place the packages, with the folded part facing down, on a baking sheet lined with baking paper and finally let everything rest for 30 minutes.
- Preheat the oven to 180°C and brush each bun with melted butter. Bake for 25-30 minutes until lightly browned on top.
- Remove the finished dish from the oven and sprinkle with powdered sugar. You can serve immediately.

- 2 cups flour
- 2 teaspoons of baking powder
- ½ teaspoon of baking soda
- ½ cup of sugar
- 2 eggs
- ½ cup olive oil
- 1 cup yogurt (if you choose to use Greek yogurt, add 1 tablespoon milk or buttermilk to thin)
- 8 small plums or 6 medium-sized ones
Method
- Preheat the oven to 180°C.
- Mix the flour, baking powder and baking soda in a large bowl. Add sugar as well.

Method
Dough:
- Mix water and apple cider vinegar in a bowl. Refrigerate until you need the mixture.
- In a large bowl, whisk together the flour, cornstarch, salt and sugar. Add cubes of cold butter and stir.
- Slowly add the cold water with the vinegar and mix until a wet dough forms.
- Carefully transfer the dough onto a lightly floured roll, form it into a ball and wrap it in cling film. Let rest for 1 hour.
- 10 minutes before you roll the dough, take it out of the fridge. If you worked with it earlier, it might crack.
- Roll the dough to the sides and place it in the baking dish. Also stick it on the sides of the mold and pierce the bottom with a fork.
Filling:
- Wash the fruit and put it in a large bowl, along with the chopped plums. Mix with half a cup of sugar and lemon juice.
- Put this mixture in a colander and place it on a bowl. Let it stand for 3 hours – the juice will start to release. You can gently stir the fruit from time to time.
- Preheat the oven to 200°C.
- Remove the strainer with the fruit and pour the fruit juice that has flowed into the pan. Pour the fruit into a bowl and set aside.
- Use a grinder to grind the tapioca into a powder. Pour the tapioca, remaining sugar, cornstarch, salt, honey and lemon zest into the pan with the fruit juice. Whisk vigorously to combine all ingredients.
- Place the pan on the stove and turn it on to medium heat.
- Cook, stirring constantly, for 5 minutes, until the mixture begins to thicken. Then remove from the heat and stir in the vanilla.

- Cut the dough in the mold into thin strips and spread the jam on the bottom.
- Pour the fruit mixture over the dough and cover it with strips from the sides – first in one direction and then in the other so that they cross and close the cake on the surface.
- In a small bowl, whisk the eggs with 1 tablespoon cold water. Brush the surface of the cake with this egg mixture and sprinkle with 2-3 tablespoons of sugar.
- Place in the preheated oven and bake for 30 minutes. After this time, reduce the temperature to 190°C and bake for another 30-40 minutes.
- Allow cake to cool completely on a cooling rack before serving – about 4 to 6 hours.

Crust:

- Remove the dough from the refrigerator and, on a floured rolling pin, roll it out from the center.
