Traditional plum cake

If you have plums rolling in your garden, there is nothing easier than making a quick cake out of them.

You will need:

  • 8 medium-sized plums
  • 2 cups semi-coarse flour
  • ½ cup granulated sugar
  • 12 teaspoons of butter
  • 1 egg
  • round baking dish with a diameter of 22 centimeters

Preparation process:

  • First, preheat the oven to 40 degrees.
  • Mix the butter, sugar, sifted flour and eggs together.
  • Mix until the ingredients are completely combined.
  • Wash the plums, remove the pits and cut them into slices.
  • Cut the plums into slices and discard the pits.
  • Grease the mold with butter or line it with baking paper.
  • Using your fingers, spread ⅔ of the dough into the mold.
  • Then stack the plum slices on top.
  • Cover the plums with the remaining dough – you can grate it on top of the plums or roll it out with a rolling pin and place it on top of them.
  • Bake at 180 degrees for about 45 minutes.

Cake with plums and crumb

You will need:

Dough:

  • 1 cup semi-coarse flour
  • 1 teaspoon of baking powder
  • ¾ cup granulated sugar
  • 1 teaspoon of vanilla extract or seeds from a vanilla pod
  • ½ teaspoon of lemon zest
  • ½ cup room temperature butter
  • 2 eggs

  • ½ cup granulated sugar
  • ¼ teaspoon ground cinnamon
  • ½ cup room temperature butter

Preparation process:

  • Preheat your oven to 180 degrees.
  • In a bowl, mix the sifted flour with the baking powder.
  • Add sugar, vanilla extract, fresh lemon zest, butter and eggs.
  • Mix all the ingredients into a smooth and creamy dough.
  • Prepare a round mold with a diameter of 22 centimeters – grease it with butter or line it with baking paper.
  • Pour the batter evenly into the prepared pan.
  • Clean the plums and cut them into slices.
  • Carefully start stacking them in an orderly fashion on top of the dough in the form.
  • Once you’re done, prepare your crumble.
  • Put flour, sugar, cinnamon in a bowl – mix everything.
  • Then add butter at room temperature to the loose mixture and combine the ingredients – crumbs should form, add flour or butter depending on the density.
  • Sprinkle the resulting crumb over the plums in the cake.
  • Bake for 50 minutes at 180 degrees – until the top is lightly golden.

Poppy pie with plums

Poppy pie with plums is the perfect choice if you want to enjoy cold days with hot tea and a good book.

You will need:

Dough:

  • 120 grams of rye flour
  • 1 tablespoon of brown sugar
  • 1 teaspoon ground cinnamon
  • a small pinch of salt
  • 65 grams of butter
  • 1 tablespoon of honey
  • 1 egg yolk

Filling:

  • 200 milliliters of milk,
  • vanilla pod
  • 2 tablespoons of honey
  • 2 tablespoons of brown sugar
  • 1 teaspoon ground cinnamon
  • 200 grams of poppy seeds
  • 1 egg white
  • 4-5 plums
  • 2 tablespoons of vanilla sugar
  • 1 teaspoon of cinnamon

Preparation process:

  • First, mix all the dry ingredients – flour, brown sugar, cinnamon and salt and mix them.
  • Add cubed butter to the loose mixture and mix into a crumbly dough.
  • Add honey and egg yolk and mix everything until a classic dough is formed.
  • Press the dough evenly into a round mold, pierce it several times with a fork and put it in the fridge for half an hour.
  • In the meantime, prepare the plums, wash them, remove unwanted objects and cut each plum into 4-6 slices.
  • Preheat the oven to 180 degrees.
  • Put the finished dough in the oven and let it bake for 10 minutes.
  • Meanwhile, prepare the filling.
  • Pour the milk into a pot and start heating it.
  • Add honey, sugar, cinnamon and seeds from the vanilla pod.
  • Mix everything together, as soon as bubbles form on the sides of the pot, add ground poppy seeds, boil for a while and let cool.
  • In another bowl, beat the egg white until stiff and carefully fold it into the cooled filling.
  • Spread the whole mixture on the pre-baked cake and put it back in the oven.
  • Bake for about 50 minutes at 165 degrees.

Sourdough plum cakes

You can try how our German neighbors bake yeast cakes with this recipe.

You will need:

  • 1 cup of milk
  • 1 teaspoon of granulated sugar
  • 3 cups semi-coarse flour
  • 1 cube of yeast
  • 1 cup powdered sugar
  • 3 egg yolks
  • 1/4 teaspoon of salt
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of almond extract
  • finely grated lemon zest from one lemon
  • 9 tablespoons of melted butter
  • 1.5 kilograms of ripe plums

Baby girl:

  • 1 ½ cups coarse flour
  • ¾ cup granulated sugar
  • 1 teaspoon of cinnamon
  • 1 teaspoon of vanilla extract
  • 10 tablespoons of chilled butter

Preparation process:

  • First prepare the yeast.
  • Put a cup of flour in a bowl and make a well in it.
  • Crumble the yeast into the hole, sprinkle it with a teaspoon of sugar and pour warm milk over it.
  • Stir the mixture a little, cover the bowl with a towel, put it in a warm place and let it stand for about 15 minutes.
  • Meanwhile, beat the egg yolks with the sugar.
  • Add salt, vanilla and almond extract, lemon zest and mix.
  • Add the resulting yeast, flour and butter to the mixture – you need to “knead” the dough properly – if you have a home robot, use it, it will make your work easier.
  • Place the finished non-sticky dough in a bowl, cover with a tea towel, place in a warm place and leave to rise for 2 hours.
  • While the dough is rising, prepare the plums.
  • Wash them, remove the seeds and cut them in half, which you will cut in half again.
  • Once the dough has risen, spread it with your fingers into a mold or baking sheet.
  • Stack the prepared plums in the dough and cover the whole tray again with a towel and let it rise for another hour.
  • Mix the flour, sugar and cinnamon in a bowl.
  • Add the cooled butter, vanilla extract and use your fingers to combine all the ingredients to form a crumb.
  • Pour the finished crumb on the risen cake.
  • Bake at 160 degrees for about one hour.

Plum cakes with cottage cheese

Cottage cheese is a great addition to any dessert. For example, try the recipe for plum dumplings with cottage cheese.

You will need:

  • 1 cup plain flour
  • 2 cups semi-coarse flour
  • 1 cup granulated sugar
  • 2 bags of vanilla sugar
  • 1 bag of baking powder
  • 500 grams of ripe plums
  • 125 grams of butter
  • 1.5 cups of milk
  • 2 eggs

Filling:

  • 500 grams of soft cottage cheese
  • ½ cup of sugar
  • 2 egg yolks
  • ½ cup of milk
  • 1 tablespoon of vanilla pudding – powder

Preparation process:

  • First, wash and pit the plums.
  • Put the milk, warmed butter, sugar, vanilla sugar and eggs in a bowl and whisk.
  • Sift the flour together with the baking powder and mix into the whipped mixture.
  • Pour the dough onto the prepared tray – greased or lined with baking paper.
  • Place the tray in the preheated oven and let the dough bake at 180 degrees.
  • Meanwhile, prepare the cottage cheese filling.
  • Beat the cottage cheese, egg yolks, sugar, milk and custard powder.
  • Take the pre-baked cake out of the oven and spread the cheese filling on it.
  • Finally, place the plums on top of this filling.
  • Put the tray back in the oven and finish baking.

Plum cakes with almonds

You will need:

  • 150 grams of butter
  • 150 grams of granulated sugar
  • 240 grams of almond flour
  • 3 eggs
  • 2 teaspoons of orange liqueur
  • grated orange peel
  • ¼ teaspoon of almond essence
  • ¼ teaspoon baking powder
  • pinch of salt
  • 75 grams of plain flour
  • 4 larger plums cut into eighths
  • 300 milliliters of whipping cream
  • ½ teaspoon cardamom
  • 2 tablespoons of powdered sugar

Preparation process:

  • First, preheat the oven to 160 degrees and prepare a baking dish.
  • Beat the butter with the sugar until the mixture has a creamy consistency.
  • Gradually add almond flour to this mixture.
  • In another bowl, mix eggs, orange peel, almond essence, baking powder and salt and also beat while gradually adding flour.
  • Finally, combine the two mixtures together, mix thoroughly and pour into the mold.
  • Mix the prepared plums with powdered sugar and carefully place them on the dough.
  • Bake for 40 minutes at 160 degrees.
  • Once the cake is done, let it cool for at least 10 minutes.
  • Meanwhile, prepare the whipped cream.
  • Beat the cream with powdered sugar and cardamom – be careful not to overbeat the cream.
  • Serve the cake slightly warm with sweet cream.
