Pear roll bun with vanilla topping
Roll buns come in handy if you have some drier rolls left. You can also use them like this. You will create a wonderful dessert.
INGREDIENTS
- 5 pcs of older rolls
- 3 ripe pears, cut into bite-sized pieces
- 1/2 cup sliced almonds
- 1 cup whipping cream (33%)
- 1/4 cup milk
- a little honey or maple syrup
- 3 eggs
- 2 teaspoons of vanilla extract
- a little ground cinnamon
- a little nutmeg
- a little ground ginger
- some ground cloves
For the vanilla cream:
- 1 cup whipping cream (33%)
- 3 egg yolks
- 2 spoons of granulated sugar
- 1 teaspoon cornstarch
- a little vanilla extract
METHOD
- Grease a baking dish with butter.
- Put the sliced rolls in the prepared baking dish and put pieces of pears and sliced almonds on them.
- We push the pears here and there into the pastry so that they are nicely connected.
- In a small bowl, whisk together the cream, milk, maple syrup (or honey), eggs, vanilla and spices.
- Pour this mixture over the rolls and pears.
- Tilt the baking dish so that the mixture spreads evenly.
- Let the filled bowl rest at room temperature for 15 minutes, which will allow the rolls to absorb the cream.
- Meanwhile, prepare the vanilla cream.
- Preheat the oven to 180 °C.
- Put the cream and vanilla extract in a small saucepan and put it on the stove over medium heat.
- Heat just below the boiling point.
- While the vanilla cream is heating, whisk the egg yolks, sugar, and cornstarch together in a medium bowl.
- Once the cream is ready (the first tiny bubbles will appear), very slowly pour the cream mixture into the yolk mixture (while stirring constantly).
- Then we return everything to the saucepan and heat again.
- We continue to whisk until the mixture thickens into a beautiful cream – this will happen as soon as the mixture reaches almost boiling point.
- Place the bun in the oven and bake for about 30-35 minutes, until it is nicely golden.
- Let it cool a little, cover with cream and you can serve.

Buns are usually made with readily available ingredients, especially fruit and other common kitchen ingredients, which are sometimes combined with each other.
A big bonus of this dish is the use of pastry that is no longer fresh. Don’t throw away rolls, toasted bread or Christmas presents. In this way, you will save the family budget and please the diners.
For fruit fillings, we mostly use apples, plums, apricots, peaches, but also less traditional rhubarb or smaller fruits. You can also use poppy seeds or nuts.
