Sweet potato soup with coconut milk
Coconut milk is very popular in Indian and Thai cuisine, where most sweet potato recipes come from. Add it to soup too!
Ingredients:
- 600 g of sweet potatoes
- 1 onion
- 4 cloves of garlic
- 3 cups of coconut milk
- 2 Tbsp curry
- 1 tbsp olive oil
- 1/4 teaspoon cayenne pepper
- salt
Method:
- Heat the oil in a saucepan and fry the chopped onion in it for approximately 5-7 minutes.
- Add crushed garlic, salt and mix.
- When the garlic becomes fragrant, add the peeled and diced sweet potatoes, curry and cayenne pepper to the pot as well.
- Sauté for approximately 5 minutes, stirring constantly.
- Add the coconut milk to the mixture and bring the mixture to a boil.
- Cook with the lid on for approximately 20-25 minutes.
- When the sweet potatoes are soft, set the mixture aside and use a food processor or immersion blender to blend until creamy.
- Taste and, if necessary, add more salt or more pepper.
This sweet potato soup looks great served with roasted chickpeas.

Creamy Sweet Potato Soup
You can adjust the consistency of the cream by adding or subtracting the amount of broth, depending on whether you prefer a thicker or more liquid version.
Ingredients:
- 800 g of sweet potatoes
- 1 onion
- 3 carrots
- 2 cloves of garlic
- 1 tbsp freshly grated ginger
- 4 cups of vegetable broth
- 2 tablespoons of olive oil
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon sweet paprika
- salt pepper
Method:
- Heat the oil in a saucepan, add the chopped onion and carrot and sauté for about 6-8 minutes until the vegetables are soft.
- Add pressed garlic, ginger, red pepper, paprika and sauté for another 2-3 minutes.
- Add diced sweet potatoes and vegetable broth.
- Bring the mixture to a boil.
- Then reduce the heat and simmer under the lid for approximately 15-20 minutes until the sweet potatoes are soft.
- Using an immersion blender or a food processor, blend the mixture until creamy.
You can decorate the sweet potato cream with pistachios, red pepper flakes or yogurt.

Delicious sweet potato and carrot soup
The basic recipe for this soup is enriched with an apple, the taste of which goes well with sweet potatoes and carrots. This soup can also be frozen very easily, for up to three months.
Ingredients:
- 1 kg of sweet potatoes
- 2 onions
- 4-5 carrots
- 1 apple
- 8 cups chicken stock
- 1 TBSP curry
- 4 tablespoons of butter
- 2 tablespoons of honey
- salt pepper
Method:
- Heat the butter in a saucepan, add the chopped onion and sauté for approximately 10 minutes.
- Add the curry and cook for another minute.
- Then add peeled and chopped carrots, sweet potatoes, stock and salt.
- Bring the mixture to a boil.
- Cover the pot with a lid and simmer over low heat for approximately 20-25 minutes until the vegetables are soft.
- Add honey and peeled and chopped apple.
- Mix the mixture using a hand mixer until smooth.
- Season with salt and pepper at the end.

Thai soup with sweet potatoes
In Thailand, this soup is traditionally served garnished with roasted almonds and coriander. If you like spicier dishes, add more curry or cayenne pepper.
Ingredients:
- 3 cups chopped sweet potatoes

Soft sweet potato-cauliflower cream
In addition to carrots, sweet potatoes can also be combined with other vegetables, such as cauliflower or leeks. Each additional vegetable gives the soup a slightly different taste.
Ingredients:
- 800 g of sweet potatoes
- 1 cauliflower
- 1 onion
- 3 cloves of garlic
- 4 cups of vegetable broth
- 2 cups of coconut milk
- 1 tbsp olive oil
- 1/2 teaspoon sweet paprika
- 1/2 teaspoon sage
- 1/2 teaspoon of turmeric
- salt pepper
Method:
- Heat the oil in a saucepan and fry the chopped onion in it for approximately 7-8 minutes.
- Then add a little vegetable stock, pressed garlic, sage, paprika and turmeric.
- After a minute, add the peeled and diced potatoes, cauliflower florets and the remaining broth.
- Bring the mixture to a boil and then simmer under the lid for approximately 20-25 minutes until the vegetables are completely soft.
- Then blend the mixture with an immersion blender into a smooth cream.
- Add coconut milk, salt, pepper and mix thoroughly.
Serve sweet potato-cauliflower soup garnished with seeds and oven-roasted cauliflower florets.

Hearty sweet potato soup
If you have a weakness for hot foods, add more ginger and chili to the soup. You will see that the soup will warm you in every way.
Ingredients:
- 700 g of sweet potatoes
- 2 carrots
- 1 onion
- 1 clove of garlic
- 1 tbsp grated fresh ginger
- 3-4 cups of vegetable broth
- 1 tbsp olive oil
- chili
- salt pepper
Method:
- Heat the oil in a saucepan and fry the chopped onion and carrot for about 6-8 minutes.
- Stir in the pressed garlic, chili and ginger to the onion and carrot, sauté for 2-3 minutes.
- Then add the diced sweet potatoes and pour in the broth.
- Bring everything to a boil and then simmer under the lid for approximately 15-20 minutes, until the sweet potatoes are completely soft.
- Blend to a smooth puree using an immersion blender or food processor.
- Season with salt and pepper.

- 1 cup grated cheddar cheese

- Heat the olive oil in a saucepan and gently fry the chopped onion for about 5-7 minutes until softened.
- Add crushed garlic and grated ginger, saute for another 1 minute.
- Then add the peeled and cubed sweet potatoes.

Sweet potatoes versus potatoes
You don’t always have to make only soup from sweet potatoes, for example, they can be baked in the oven as a side dish, and you can easily replace classic potatoes with them. They can also be prepared in the form of puree, chips, fries.
How are sweet potatoes and potatoes different? Both crops have a number of characteristics in common, for example a high content of vitamin C and minerals such as potassium, magnesium and iron. Compared to normal potatoes, sweet potatoes stand out for their high content of vitamin A. Sweet potatoes also contain more carbohydrates and are therefore more caloric than regular potatoes.
