Method
- Boil the potatoes in their skins until soft.

- Then we add plain flour, eggs, a pinch of salt and make a stiffer dough.
- We make patties from the dough, which we fry in fat in a pan.
- Spread the finished pancakes according to custom either with jam, sweet cottage cheese or grated apples.

Stuffed potato dumplings with plums
Various variations of fruit dumplings are typical for Czech cuisine. Most of us associate the end of the summer holidays and the beginning of September with plums. Try this recipe for plum dumplings made from potato dough.
What will we need
- approx. 500 g of boiled potatoes in their skins
- 300 g of whole grain spelled flour
- 250 g of soft cottage cheese
- 1 egg M
- 3.5 g of salt

Method
- Peel the potatoes and finely grate them.
- Add flour, salt and whole eggs.
- Mix all the ingredients and knead thoroughly.
- Let the dough rest for a short time (about 5 minutes).
- Once you have washed and pitted the plums, immediately wrap them in dough and shape them into dumplings.
- Boil them in slightly salted water for 7-8 minutes.
- Dumplings are traditionally seasoned with ground poppy seeds, sugar and melted butter.
- But maybe there is also cinnamon, yogurt, lumpy cottage cheese or sour cream.

Sweet potato pie
Focus on this sweet potato pie. Creamy potatoes go well with the filling, which is wrapped in a crumbly short pastry
What will we need
- 500 g of sweet potatoes
- 320 g of puff pastry
- 125 g of butter
- 250 g of powdered sugar
- 150 ml whole milk
- 3 eggs
- grating nutmeg
- ½ teaspoon ground cinnamon
- 1 teaspoon of vanilla paste
Method
- Boil whole, unpeeled sweet potatoes for 30 minutes until very soft.
- Drain well and let cool for 10 minutes, then peel.
- Heat the oven to 180 degrees.
- Roll out the shortcrust pastry and line a 23 cm cake tin with it.
- Line it with baking paper and fill with beans and bake for 20 minutes.
- Remove paper and beans and bake for another 5 minutes.
- Tip the peeled sweet potatoes into a large bowl with butter and mash with a potato masher until completely smooth.
- Add the sugar, milk, eggs, spices and vanilla and beat until combined and smooth.
- Tip the sweet potato filling into the mold and smooth the surface with a spatula.
- Bake for 50-55 minutes, until the pastry and top of the cake are golden brown and the center is set.

Where did sweet potatoes come from?
Sweet potatoes are one of the oldest vegetables known to mankind.
Scientists believe that they were cultivated in Central America already thousands of years ago. Their first appearance dates back to 750 BC in Peruvian records.
They were first brought to Europe by Christopher Columbus, who discovered them on his journey in 1492. He liked the vegetable so much that he took it home on his fourth trip to grow it in Europe.
Because sweet potatoes were very popular in Spain, Spanish conquistadors took them on their travels, so Spanish sailors brought them to China in the 16th century, and in the 17th and 18th centuries, sweet potatoes spread throughout Asia, Africa, and Latin America.
They became famous not only as a source of food, but also as a source of starch and alcohol. The popularity of sweet potatoes also contributed to their undemanding cultivation.
