Yeasted poppy seed strudel
For lovers of leavened pastries, we have a leavened poppy seed strudel like grandma’s. This type of dough is easy to work with as it does not tear and is flexible. When preparing, watch the amount of milk – it depends on your flour – sometimes the specified amount is enough, sometimes you have to add more.
Dough ingredients
- 500g plain flour
- 2 yolks
- 1 yeast
- 40g of melted butter
- 1 spoon of sugar
- 250 ml of milk
- Pinch of salt
Ingredients for the filling
- 2 cups of poppy seeds
- 1.5 cups of milk
- 5 tablespoons of cane sugar
- A handful of raisins (to taste)
Method
- First, let the yeast rise by putting a spoonful of milk, a spoonful of flour, sugar and yeast in a small bowl or cup.
- Mix all the other ingredients and add the risen yeast. Make a smooth dough.
- Place in a bowl, cover with a tea towel and leave to rise for an hour.
- In the meantime, prepare the poppy seed filling by heating the milk in a saucepan, adding the other ingredients and cooking until thickened.
- After rising, divide the dough into two halves. Roll out a thin sheet from each half.
- Place the filling on top and wrap. Then carefully transfer to a baking sheet and leave to rise for another 20 minutes.
- Brush the surface of the strudel with beaten egg or butter and bake in a preheated oven at 180°C for 30-40 minutes. Keep an eye on it, every oven bakes differently.
- Allow the finished strudel to cool and serve sliced.

Poppy seed strudel with sour cream
This recipe for poppy seed strudel is a little simpler. Thanks to the presence of sour cream, there is no need to cook poppy seeds. Make your work easier and try baking this dessert.
Ingredients
- 250g of puff pastry
- 300g of ground poppy seeds
- 2 eggs
- 200g of sour cream
- 2 apples
- 1 teaspoon of ground cinnamon
- 1.5 spoons of starch
- 120g of powdered sugar
- 1 egg for brushing the strudel
- Icing sugar for sprinkling
Method
- First, mix the poppy seeds with sour cream. Add eggs, a teaspoon of cinnamon, finely grated apples, sugar and starch.
- Roll out the puff pastry into a larger rectangle and spread the poppy seed filling in the middle.
- Then wrap/roll the dough and fold the ends under.
- Transfer the strudel to a baking sheet lined with baking paper and brush with beaten egg.
- Bake in a preheated oven at 180°C for about half an hour or until golden.
- Allow the finished strudel to cool a little and then sprinkle with powdered sugar.

Puff pastry with poppy seeds
A simple and very quick recipe that only takes a few minutes to prepare is perfect if you need to quickly prepare something for a gathering with friends or family.
Ingredients
- 1 package of puff pastry
- 200g of ground poppy seeds
- 5-7 spoons of granulated sugar (to taste)
- 500 ml of milk
- 2 tablespoons jam or other jam
- 1 egg
Method
- You prepare the filling for the strudel by grinding the poppy seeds and putting them in a pot with sugar. Add milk and cook over low heat for about 10 minutes until thickened.
- Then remove from heat, add marmalade or jam and mix everything.
- After the filling has cooled, roll out the puff pastry.
- Spread it with the prepared poppy seed filling and wrap it up. Fold the edges of the wrap under.
- Bake on baking paper coated with beaten egg at 170°C for about half an hour.
- Allow the finished strudel to cool, dust with powdered sugar and serve.

Fluffy strudel with poppy seeds and plums
If you want to make your poppy seed strudel special, add plums to the filling. Thanks to the presence of fruit, the result will be supple, juicier and also richer in vitamins.
Dough ingredients
500g plain flour
- 30g of yeast
- 180 ml of milk
- 4 tablespoons of cane sugar
- 1 packet of vanilla sugar
- Pinch of salt
- 60g of melted butter
- 2 eggs + 1 for spreading
- Icing sugar for sprinkling
Ingredients for the filling
- 450 ml of milk
- 300g of ground poppy seeds
- 100g cane sugar
- 1 packet of vanilla sugar
- 1-2 spoons of plum jam
- 10-15 pieces of plums
- Cinnamon sugar
Method
- Sift the flour into a large bowl. Heat the milk.
- Make a small hole in the flour and crumble the yeast into it. Add 1 tablespoon of cane sugar and half of the warmed milk. Dust the sides with flour.
- Cover with a towel and let the yeast rise. It will take about half an hour.
- Then add the remaining milk, sugar + vanilla sugar, a pinch of salt, melted butter (it must not be hot) and eggs.
- Make a smooth dough.
- Put the dough on a floured roll and divide it into two halves. Let these two halves rise under a tea towel for another 30 minutes.
- While the dough is rising, prepare the filling. Pour milk into a saucepan, add poppy seeds and sugar. Stir and let it cook for about 10 minutes on low heat.
- Stir continuously to prevent the poppy seeds from burning. Remove from the heat and finally add the jam. Then leave to cool.
- Cut the plums in half, prepare the cinnamon sugar and beat the eggs to coat the strudel.
- On a floured rolling pin, roll the buns into thin patties.
- Then spread the poppy seed filling on each pancake and leave the edges without filling. Brush the edges with beaten egg.
- Spread the sliced plums on top and sprinkle with cinnamon sugar.
- Roll up the strudel and tuck the ends under.
- Transfer the rolls to a baking sheet lined with baking paper, cover with a tea towel and leave to rise for another 30-40 minutes to make the result even fluffier.
- Preheat the oven to 170°C. Brush the rolls with a beaten egg and bake until golden, about 35-40 minutes.
- Leave the finished strudels to cool, sprinkle with icing sugar and serve sliced.

Unleavened strudel made from semi-coarse flour

- 220g semi-coarse flour
- 200g spread butter

- Pinch of salt
Ingredients for the filling

- 13 spoons of milk
- 1 vanilla sugar
- Granulated sugar to taste
- 1 teaspoon of ground cinnamon
- 1 egg white for spreading
Method
- First prepare the filling. Heat the milk, add the ground poppy, sugars, jam, cinnamon and let it boil for about 10 minutes.
- Let the filling cool.
- Make a smooth dough from flour, butter, egg yolk and a pinch of salt.
- On a floured rolling pin, roll out the dough into a thin sheet and apply the poppy seed filling.
- Wrap and fold the edges under.
- Transfer the strudel to a tray lined with baking paper, brush with beaten egg white and bake in a preheated oven at 180°C for approx. 35-40 minutes or until golden.
- Allow the finished strudel to cool, dust with icing sugar and serve sliced.
