Apple scarves from homemade dough

This apple pudding recipe is quick, but the dough needs to be prepared an hour in advance. However, this delicious buttery and crispy dough is worth it.

Ingredients:

For the dough:

  • 1 and ¼ cups semi-coarse flour
  • 1 and ¼ cup plain flour
  • ½ teaspoon of salt
  • 1 cup cold butter cut into small cubes
  • ½ cup of sour cream
  • 4 tablespoons of lemon juice
  • ½ cup ice water

For the filling:

  • 2 large apples
  • ⅓ cup sugar
  • ½ teaspoon ground cinnamon
  • pinch of salt

To finish:

  • 1 egg yolk
  • 2 tablespoons of water
  • icing sugar

Method:

Preparing the dough:

  • Mix flour with salt and add butter.
  • Using a mixer, beat the mixture so that everything comes together (but do not beat for too long so that the butter does not soften).
  • Whip the sour cream with lemon juice and water to the side.
  • Then, using a fork, carefully mix this mixture with the butter and flour.
  • Shape the dough into a loaf, wrap it in cling film and put it in the fridge for at least 1 hour (it can stay there for up to 2 days and it can last a month in the freezer).

Preparation of the filling:

  • While the dough is chilling, prepare the filling.
  • Peel the apples, remove the cores and cut them into small cubes.
  • Put them to boil in a small amount of water together with cinnamon and sugar.
  • Cook for about 8-10 minutes until soft.
  • After cooking, strain them (drink the water from the apples) and let them cool down for a while.

Preparing the bags:

  • Divide the chilled dough into 2 halves.
  • Put one half back in the fridge and roll out the other half on a lightly floured rolling pin to about 3 mm thick dough.
  • Now it’s up to you if you want to cut the dough into squares with a knife or cut it into a circle of any size with a mug.
  • Put the filling (1-2 spoons) into the cut pieces and fold them in half (for squares, you can decide whether to cut them in half into a rectangle or triangle shape).
  • Brush the edges of all the scarves with water so that they come together well.
  • In addition, press them with a fork (it will come together even better and it will look nice).
  • Make small slits on each scarf and brush them with egg yolk mixed with a little water.
  • Place them on a baking sheet lined with baking paper.
  • Bake them at 190 °C for about 20 minutes.
  • Repeat the same with the other half of the dough.
  • Bake until golden. Sprinkle the cooled pieces with powdered sugar and serve.

Tip: Feel free to prepare the cooled dough in advance. Just wrap the rolled sheet in baking paper (like rolled puff pastry from the store) and store in the fridge. There he can wait for the right time. Then it will be enough to cut, fill, spread and put it in the oven.
