The best rhubarb recipes

Although rhubarb is a vegetable, it is used more in sweet cuisine. Its slightly sour taste and juiciness predestined it to form the filling of various pastries.

It can also be preserved as compote or jam. For use fresh, its season is relatively short, roughly from May to the end of June.

We use rhubarb stalks without leaves . Rhubarb grown in the garden is harvested before flowering and the petioles are not cut, but broken off. Peel off the hard skin before use. Then cut the light green flesh of the petioles. They are usually cut into cubes or sticks about 3 cm long.

Traditional rhubarb pie

A delicious dessert that is both spicy and sweet.

INGREDIENTS for the cake

  • 1 and 1/3 cup plain flour
  • 125 g of butter
  • 1 cup of sugar
  • pinch of salt
  • a pinch of cinnamon
  • a pinch of nutmeg
  • 4 cups chopped rhubarb
  • 1/3 cup chopped walnuts

INGREDIENTS for crumbs

  • 1 cup of flour
  • 2/3 cup sugar
  • 100 g of butter

METHOD

  1. Preheat the oven to 180 °C.
  2. Put 1 cup of flour, butter and a pinch of salt in a bowl.
  3. Add 4 tablespoons of water and make a dough.
  4. Place in a cake pan.
  5. Mix the rest of the cake ingredients in a bowl.
  6. Pour into the dough mold.
  7. Then we work together the ingredients into a crumb.
  8. Sprinkle the cake.
  9. Bake for approximately 50 minutes.

Easy Rhubarb Jam

Great marmalade for pancakes and bread.

INGREDIENTS

  • 500 g of chopped rhubarb
  • 250 g of sugar
  • 1/2 jelly fix

METHOD

  1. Cover the rhubarb with water and boil for a while.
  2. Mix and add sugar.
  3. We cook for another 10 minutes.
  4. Pour the marmalade into glasses.

Tip : After filling, turn the glasses upside down, so the marmalade can be preserved.

Rhubarb and strawberry marmalade

You will simply love the combination of rhubarb and strawberries.

INGREDIENTS

  • 250 g of rhubarb
  • 250 g of strawberries
  • 250 g of sugar
  • 2 tablespoons of lemon juice
  • 1/2 jelly fix

METHOD

  1. Pour water over the rhubarb and strawberries and boil for a while.
  2. Mix and add sugar.
  3. We cook for another 10 minutes.
  4. Stir in the lemon juice.
  5. Pour the marmalade into glasses.
