Quick tomato soup with rice
This recipe is a bit of a classic. A simple tomato puree soup that is wonderful for dinner. It’s filling and light at the same time.
Ingredients
- 1 large onion
- 100 g of tomato puree
- 1 l broth/ 1 l water + bouillon cube
- 2 tablespoons plain flour
- 1 Tbsp butter
- pepper, salt, sugar
- 200 g of boiled rice
Method
- Melt the butter in a saucepan
- Finely chop the onion and fry it in butter until golden
- Dust with flour and mix
- Add the tomato puree and cover with broth or water with dissolved bouillon
- Bring to a boil and cook the soup for a few minutes
- Salt, pepper or add sugar to taste
- Finally, add the cooked rice

Homemade fresh tomato soup
There is nothing better than preparing food from basic, fresh ingredients. It takes a little time and a little work, but the result is really worth it.
Ingredients
- 1 kg of ripe fresh tomatoes
- 1 onion
- 1 liter of broth
- 1 Tbsp butter
- a few leaves of fresh basil or parsley
- salt pepper
Method
- Peel and finely chop the onion, wash the tomatoes and cut them into small pieces
- Melt the butter in a pan
- Add onions and tomatoes and fry
- Pour in the finely chopped basil and mix
- Lower the flame, close the lid and simmer for a while in its own juice
- Transfer the stewed tomatoes to a larger pot and cover with broth
- Boil for a few minutes
- Season with salt and pepper
- Blend the finished soup until smooth
- Garnish each portion with basil or parsley and serve with a toasted slice of light pastry
