Mini tortillas with shrimp, avocado and salsa
Do you want to offer your guests something new? Something they actually enjoy? Then try this recipe! Luxurious small tortillas with mashed avocado, grilled shrimp and tomato salsa will be loved by absolutely everyone.
INGREDIENTS
- 2 tablespoons chopped cilantro plus 1 tablespoon extra
- 1 teaspoon of cumin
- a pinch of chili flakes
- 1 tablespoon lime juice plus 1 extra tsp
- 1 clove of garlic, crushed
- 2 teaspoons of olive oil
- 12 large shrimp, peeled
- 4 whole wheat tortillas
- olive oil spray
- 1 large tomato, seeded and diced
- 2 spring onions, thinly sliced
- ½ medium ripe avocado, peeled, mash the pulp
- freshly ground black pepper
METHOD
- Combine coriander, cumin, chili flakes, lime juice, garlic, and olive oil in a medium glass or ceramic bowl.
- Add the shrimp and toss to coat.
- Cover and leave to marinate in the fridge for 30 minutes.
- Meanwhile, preheat the oven to 180°C.
- Line a large tray with baking paper.
- Cut 12 small circles from the tortillas using a cookie cutter.
- Place the tortilla rounds on the prepared baking sheet and spray lightly with olive oil.
- Bake for 6-7 minutes, turning halfway through, until golden and nicely crispy.
- Set aside to cool.
- In a small bowl, put the tomatoes, spring onions, a spoonful of cilantro and lime juice.
- Mix and season with pepper.
- Set a large grill pan to high heat.
- Shake off any excess marinade from the prawns and grill for 1-2 minutes on each side.
- Spread half a teaspoon of avocado on each tortilla circle.
- Top with grilled shrimp and a spoonful of salsa.
- Serve immediately.

Spinach tortilla rolls filled with smoked salmon
Delicious spinach tortillas filled with smoked salmon, cream cheese, spinach and fresh herbs are an easy and healthy appetizer that you can make in just 10 minutes!
INGREDIENTS
- 2 spinach tortillas
- 110 – 170 g of cream cheese
- 1 tablespoon chopped fresh dill
- ½ tablespoon of chives
- 1/8 teaspoon garlic powder
- 2-3 cups spinach
- 110 – 170 g of smoked salmon
METHOD
- In a small bowl, combine the cream cheese, dill, chives, and garlic powder.
- Place both tortillas on a work surface and spread the cream cheese evenly over each one, leaving about a centimeter of space around the edges.
- Spread the cream cheese all the way to the edge on one side, as you will use that side to “seal” the roll.
- Divide the spinach evenly between your two tortillas, then divide the smoked salmon over the spinach.
- Roll each tortilla tightly and tuck the ends.
- It is important to roll them as tightly as possible so that the rolls stay together when cut.
- Using a small serrated knife, cut off the edges of each tortilla, then cut each into one-inch rounds.
- You should have about 14-16 rolls.
- Serve!

Mini tacos with ground beef
These small ground beef tacos are the perfect treat for parties and celebrations. They are easy to prepare, will please every guest and will wonderfully diversify your menu.
INGREDIENTS
- 10 large wheat or corn tortillas
For minced meat:
- 500 pounds of ground beef
- 1 tablespoon of vegetable oil
- ½ cup onion, finely chopped
- 1 tablespoon of chili powder
- ½ teaspoon of garlic powder
- 1 teaspoon ground cumin
- ¼ teaspoon dried oregano
- ½ teaspoon paprika
- ½ tsp salt and pepper (or to taste)
For topping (according to preferences):
- 1 cup grated cheese
- 1 cup chopped tomatoes
- 1 cup chopped lettuce
- 1 cup corn salsa
- 1 cup pico de gallo
- 3 avocados, diced
- ½ cup sour cream
- 1 bunch of chopped cilantro
- lime wedges, for garnish
METHOD
- Using a round cookie cutter (about 7.5 to 10 cm in diameter), cut small circles from the larger tortillas.
- You should be able to get 2 to 3 small rounds from one large tortilla.
- This will vary depending on the size of your tortillas.
- The goal is to have about 24-30 mini tacos.
- Spray small tortillas with cooking spray and heat them in the microwave for 10 seconds to make them pliable.
- Turn muffin pan upside down and spray with cooking oil.
- Place small tortilla rounds between the sections of the muffin tin to form a taco shape.
- Bake at 190 degrees Celsius for about 5-8 minutes or until the tacos are lightly golden.
- Leave to cool slightly in the tin so that they hold their shape.
- Heat the oil in a large skillet over medium-high heat.
- Add the ground beef and onion to the pan and break it up with a spatula.
- Sauté until beef is browned (about 6-8 minutes).
- Add chili powder, garlic powder, cumin, oregano, paprika, salt and pepper.
- Mix well.
- Leave the beef on the stove until you’re ready to put it on top of the tacos.
- Fill each mini taco with a scoop of ground beef filling.
- Add your choice of taco toppings such as shredded cheese, tomatoes, lettuce, avocado, corn salsa, etc. to your personal preference.

INGREDIENTS
- 3 large wheat tortillas
- olive oil spray
- 400 g canned corn, drained and rinsed
- 1/2 medium avocado, finely chopped
- 1 medium tomato, seeded, finely chopped
- 1 long red chili pepper, seeded, finely chopped
- 2 tablespoons of finely chopped fresh coriander leaves
- 1 tablespoon of olive oil
- 1 and 1/2 tablespoons lime juice
METHOD
- Preheat the oven to 180°C.
- Lightly grease two muffin tins.
- Wrap the tortillas in foil.
- Bake for 5 to 7 minutes.
- Remove 1 tortilla from the foil and keep the remaining tortillas covered.
- Using a 6.5 cm diameter cutter, cut 8 rounds from the tortilla.
- Press the wheels into the prepared holes in the mold.
- Repeat with remaining tortillas.
- Spray with oil.

INGREDIENTS
- 8 wheat tortillas
- 3/4 cup tomato pizza sauce
- 1 and 1/2 cups shredded mozzarella
- 3/4 cup small pieces of spicy salami (optional)
- 1 teaspoon chopped fresh parsley or basil (optional)
METHOD
- Preheat the oven to 200 degrees Celsius.
- Lightly grease the muffin tin.
- Cut 2-3 circles from each tortilla using a cutter.
- Press each round into a muffin tin.
- Add a teaspoon of sauce to the center of each round.
- Top with cheese, then pieces of spicy salami.
