What will we need

  1. 500 g grated cucumber (roughly)
  2. 375 g Greek yogurt
  3. 2 tablespoons of extra virgin olive oil
  4. 2 tablespoons chopped fresh dill
  5. 1 tablespoon of lemon juice
  6. 1 medium garlic clove (pressed)
  7. ½ teaspoon fine sea salt

Method

  1. Grate the cucumber on a grater
  2. Then squeeze out all the excess water
  3. Transfer the squeezed cucumber to a serving bowl
  4. Add yogurt, olive oil, dill, lemon juice, garlic and salt
  5. Stir to mix the ingredients
  6. Let the mixture sit for 5 minutes to allow the flavors to combine
  7. Taste and add more chopped dill, lemon juice and salt if needed
  8. Serve the tzatziki immediately or refrigerate for later use
  9. Leftover tzatziki will keep in the fridge for about 4 days

Tzatziki with sour cream

Creamy Traditional Greek Sour Cream Sauce uses only simple ingredients and combinations like Greek yogurt, sour cream and fresh lemon juice.

What will we need

  1. Large cucumber (peeled and grated)
  2. 120 ml Greek yogurt
  3. 120 ml of sour cream
  4. 3 tablespoons of olive oil
  5. 3 tablespoons lemon juice (freshly squeezed)
  6. 2 cloves of garlic
  7. 30 g dill (fresh, finely chopped)

Method

  1. Peel the cucumber to remove most of the skin
  2. Cut it open and remove the seeds with a spoon
  3. Grate the cucumber using a grater with large holes
  4. We remove excess moisture from the cucumber by squeezing it wrapped in a kitchen towel or squeezing it by hand

Method

  1. Peel the cucumber and coarsely grate it

Greek Chicken Souvlaki (Chicken Gyros)

This Greek Chicken Skewers recipe is made with lemon, garlic, spices and is delicious with pita bread and the best tzatziki recipe you can make with our recipes above!

What will we need

  1. 30 ml of olive oil
  2. 4 tablespoons of fresh lemon juice
  3. 4 cloves of garlic (pressed)
  4. A teaspoon of dried oregano
  5. ½ teaspoon of salt
  6. ½ teaspoon of pepper
  7. 1 kg boneless skinless chicken breast (cut into cubes)

To serve

  • Pita bread
  • Arugula
  • Halved cherry tomatoes
  • Chopped red onion
  • Tzatziki sauce (prepare homemade tzatziki according to our recipes, see the first part of the article)
  • Feta cheese

Method

  1. Mix olive oil, lemon juice, minced garlic, oregano, salt and pepper in a large resealable bag
  2. Add the chicken to the bag, squeeze out the excess air and seal the bag
  3. Marinate for at least 1 hour, but no longer than 6 hours
  4. Preheat the oven to 180 degrees in grill mode
  5. Remove the chicken from the marinade and skewer it
  6. Bake the skewers, turning frequently, on a baking sheet on the upper rack in a preheated oven
  7. We serve chicken souvlaki with pita bread, selected side dishes and our original tzatziki recipe

Lamb souvlaki

1 kg leg of lamb or shoulder (diced)
80 ml of olive oil
2 cloves of garlic (pressed)
Juice of 1 lemon
2 red onions (chopped coarsely)
A teaspoon of dried Greek oregano
A teaspoon of dried thyme
½ teaspoon of smoked paprika
½ teaspoon cumin
Salt and freshly ground pepper

Prepare the marinade for the lamb souvlaki. Add olive oil, garlic, lemon juice, herbs and spices to a large bowl and season with freshly ground pepper – no salt yet.

Mix all ingredients to combine. Add the meat and chopped onion and mix again to coat the meat.

Cover the bowl with plastic film and put it in the fridge, where we let the meat marinate for at least 4 hours. Then we skewer the meat.

We fire up the grill, the oven in grill mode or the pan and cook the meat for about 10-15 minutes, until it is sufficiently cooked, but still juicy.

This Greek lamb burger (Biftekia) recipe is out of this world! Tasty, juicy and refreshing at the same time! What will we need

For a burger

  1. ½ small red onion
  2. 60 g crumbled feta
  3. 2 eggs
  4. 60 g breadcrumbs
  5. A spoonful of lemon juice
  6. A spoonful of balsamic vinegar
  7. 6 cloves of garlic (pressed)
  8. 2 tablespoons chopped fresh parsley (or 2 teaspoons dried)
  9. A spoonful of ground fresh dill
  10. A spoonful of chopped fresh mint
  11. 1 tablespoon minced fresh oregano (or 1 teaspoon dried)
  12. 1 ½ teaspoons of salt
  13. A teaspoon of smoked paprika

  1. 6 burger buns
  2. Roasted red pepper hummus

Method

  1. First, we prepare the tzatziki recipe according to our procedure so that they have time to cool
  2. Coarsely grate the onion into a large bowl
  3. Then add all the remaining ingredients for the burger patties, except for the ground lamb and mix well
  4. Finally, add the lamb and mix with your hands to combine the ingredients
  5. Line a large tray with baking paper
  6. Divide the meat mixture into 6 equal patties
  7. Make a shallow depression in the middle of each patty like this
  8. Cover the patties with plastic wrap and refrigerate for at least 30 minutes
  9. To prepare the hamburgers in a pan, heat 2 tablespoons of vegetable oil in a large frying pan over medium heat
  10. Gradually add patties to the hot pan and cook for about 4-6 minutes on each side
  11. Remove the meat patties to a plate and cover with cling film and let them rest for 5 minutes
  12. To prepare flatbreads on the grill, heat the grill to 200 – 220 degrees with the lid closed
  13. After heating the grill, clean it and grease it with vegetable oil
  14. Add patties and cover the grill
  15. Cook until brown for about 3-5 minutes
  16. Turn the hamburgers over, cover the grill and cook for another 3-5 minutes
  17. Transfer them to a plate and cover with foil and let rest for 5 minutes
  18. Cut the hamburger buns and spread them with softened butter
  19. Place on the grill or pan and fry for about a minute until golden
  20. To build the burger, we start with a layer of hummus, lots of chopped sundried tomatoes, arugula, meat patties, homemade tzatziki sauce, tomatoes, cucumbers and pickled red onions

What can we substitute for lamb?
Minced meat mix: Minced beef and pork in a ratio of 80:20 is optimal for perfect taste, juiciness and perfect texture. Ground mix is ​​easily available at any butcher shop. The fresher the meat, the more tender and tastier the biftekia will be.

Ground pork, turkey, chicken : These types of meat are leaner than lamb or beef, so you may want to add an extra tablespoon of olive oil to the ground meat mixture to keep the burgers from being dry.
