Unbaked chocolate cheesecake made from bebe biscuits and Nutella

Nutella perfectly sweetens unbaked pastries. This recipe is very simple. Although it has to be chilled for a long time, if it is prepared in the evening, you can easily have it with your coffee the next day.


On the corpus:

  • 280 g cocoa bebe biscuits
  • 7 tablespoons of melted butter (about 100 g)

For the filling:

  • 2 and ½ cups cream cheese
  • ⅔ cup sugar
  • 1 and ½ cups of Nutella
  • 1 spoon of cocoa
  • 1 teaspoon of vanilla extract

For the frosting:

  • ⅓ cup whipping cream (80 g)
  • ⅔ cup of Nutella (200 g)


Corpus preparation:

  • Blend the biscuits in a blender, add the butter and blend again.
  • Put this body mixture on the bottom of a cake tin with a diameter of about 20 cm.
  • Press firmly to the bottom and put in the fridge to cool.

Preparation of the filling:

  • Beat the cream cheese together with the sugar until smooth, beat in the Nutella, cocoa, vanilla extract.
  • Layer the finished filling on the body and let it sit in the fridge for at least 6 hours (preferably overnight).

Preparation of the topping:

  • Heat the whipping cream over low heat and bring to a boil.
  • Scoop the Nutella into a bowl on the side and pour the heated cream over it.
  • Then beat the cream and Nutella mixture until smooth.
  • Pour the cooled frosting onto the cake and leave to cool for another 2 hours in the fridge.

Cottage cheese biscuit dessert

Excellent unbaked pastries must of course also be decorated with fruit. And what about on summer days? Having a piece of this chilled strawberry dessert is just that.


  • 100 g of butter biscuits
  • 90 g of powdered sugar
  • 55 g of melted butter
  • 125 ml whipping cream
  • 450 g of cottage cheese
  • 5 large strawberries
  • 4 tablespoons of orange juice
  • 2 spoons of gelatin powder


  • Mash or blend the butter biscuits and mix with the melted butter and 30 g of powdered sugar.
  • Put the dough for the body in a cake tin with a diameter of 20 cm and press it to the bottom.
  • Mix the cottage cheese together with the rest of the sugar, blended strawberries and whipped cream.
  • Heat the orange juice in a saucepan and mix it with the gelatin according to the instructions on the bag.
  • Cook for about 4 minutes until thickened.
  • After it has cooled slightly, mix it with the cottage cheese filling.
  • Layer the filling on the wafer body and let it cool in the fridge for 4 hours.

Unbaked cake with cottage cheese

Another recipe for no-bake sour cream cake is here. If you are looking for the simplest option, this dessert offers it. You don’t have to cook anything, and you don’t even have to prepare jelly.

On the corpus:

  • 300 g of graham crackers or BeBe whole grain crackers
  • 5 spoons of powdered sugar
  • ⅛ teaspoon of salt
  • 140 g of melted butter

For the filling:

  • 670 g of fresh cream cheese
  • ½ cup of sugar
  • ½ cup of sour cream
  • 300 ml whipping cream
  • 3 tablespoons of lemon juice
  • ¾ cup of powdered sugar
  • 1 teaspoon of vanilla extract

For decoration:

  • 240 ml whipping cream
  • ½ cup powdered sugar
  • ½ teaspoon of vanilla extract


  • Blend the graham crackers, add the melted butter and sugar, mix thoroughly.
  • Put the dough for the body in a cake mold with a diameter of 20 cm and press it to the bottom.
  • Beat cream cheese with sugar, add sour cream, vanilla extract, lemon juice, powdered sugar and whipped cream.
  • Spread the finished cream on the body and let it cool for 5-6 hours in the fridge.
  • For decoration, whip the cream with sugar and vanilla.
  • Use a pastry bag to decorate the cake and you can serve it.

Cold pastry sponge cake

Pastry sponges can be used perfectly for unbaked doughs. They are sweet, tasty and often dipped in various liquids. In this recipe, we soak them in homemade rum syrup.


  • 30-35 pastry sponges

For the syrup:

  • ¾ cup of water
  • ¾ cup of sugar
  • 1 teaspoon rum extract or rum (2 tablespoons)

For the filling:

  • 1 cup of sugar
  • 2 large eggs
  • 1 cup of milk (200 ml)
  • 1 teaspoon of vanilla extract
  • 2 slices of gelatin
  • 2 tablespoons of water
  • 500 ml whipping cream
  • 100 g of candied fruit


  • Boil water and sugar to a syrup consistency, let it bubble for about 2-3 minutes.
  • Allow the syrup to cool slightly, then stir in the rum or flavoring.
  • Once the syrup has cooled down, you can dip the sponges into it from both sides.
  • Line a cake tin with a diameter of about 20 cm all around with sponges (about 20-25 sponges should be enough for this), use the rest for the bottom and keep half for the next layer.

Preparation of the filling:

  • Place the whisk container, including the whisks, in the freezer to cool for 20 minutes.
  • Then just pour the cream into a bowl and whip for 1 minute.
  • Soak the gelatin slices in cold water.
  • Over a water bath, beat the eggs with sugar and milk into a cream.
  • You can tell when the cream is ready by its stiffness, it starts to thicken and stick to the whisk.
  • Remove the finished cream from the steam and beat in the water-free jelly slices.
  • Stir until completely cool.
  • Then add whipped cream, candied fruit to the mixture and mix.
  • Layer half of the cream on the first layer of the sponge cake.
  • Dip the rest of the sponge cake in the syrup and stack it on top of the cream.
  • Spread the other half of the filling on the sponge cake.
  • Leave to cool in the fridge, preferably overnight.
