  2. Add minced garlic to the meat and onion.

  4. Sprinkle breadcrumbs . Cover the meat evenly with breadcrumbs and set aside. Meanwhile, prepare a baking tray and preheat the oven to 180°C.
  5. Knead the meat and all added ingredients well with your hands.

  8. Cover with about a centimeter of water and bake in a heated oven for about an hour at 180 °C.

INGREDIENTS

  • 500 g of minced meat
  • 1 onion
  • 3 cloves of garlic
  • 1 egg
  • 5 buns
  • milk
  • 2 tablespoons of butter
  • 2 eggs and 3 pickles for filling

METHOD

  1. Cut the rolls into cubes and cover with milk.
  2. Add the rolls in the milk to the bowl with the meat, onion and garlic.
  3. Process the mixture properly, add eggs.

  4. Mix all the ingredients well in a bowl and form a cone.
  5. Place slices of butter, cover with hot water, cover the pan and bake at 150°C for about 2 hours.
  6. Toward the end of baking, we can uncover the pan and increase the temperature.
  7. Homemade meatloaf with vegetables is served sliced with mashed potatoes or potatoes and lettuce, or with pickles.

How to choose the right meat for homemade meatloaf?

If you want to achieve a really high-quality homemade chop roast, then choose fresh meat from the butcher. Meat semi-finished products are often supplemented with hydrolyzed rapeseed protein, which turns into glutamates after heat treatment. In addition, it contains much more fat than we actually need.

Feel free to have the meat ground at the butcher, and if you have a grinder at home, do the work yourself. It will be worth it. In addition, the correct ratio of meat and fat does not need any binder in the form of eggs.

From the pork, we recommend mixing the fatter pork flank together with the pork shoulder. Beef is the best back. It is juicier and less sinewy than the front.

The ideal ratio of beef to pork is 1:1, but you can experiment with the ratios. You can also contribute to increasing juiciness by adding bacon or other sausages. It is good to add potatoes, buns soaked in milk or oatmeal for softening.

And how do we actually do it so that our homemade meatloaf keeps its shape and does not crack during baking? Rubbing with water or mustard helps. Thorough processing of the mixture is also necessary.
