METHOD

  1. Preheat the oven to 180°C.
  2. In a large bowl, mix the flour with the baking soda and a pinch of salt.
  3. In another bowl, mix the cocoa powder with the maple syrup, coconut oil, applesauce and all the spices.
  4. Add the mixture from the first bowl (flour, table salt and a pinch of salt) and almond milk to the bowl with the cocoa powder, coconut oil and applesauce. Mix the batter thoroughly to combine all the ingredients together.
  5. Grease and line a baking sheet and pour the batter into it.
  6. Bake the dough for about 20 to 23 minutes.
  7. Leave the baked dough to cool.
  8. In the meantime, heat the coconut milk intended for the frosting and add the chocolate to it.
  9. Stir until the chocolate frosting is lump-free.
  10. Pour the chocolate frosting over the cooled baked brownies, let it harden, then cut the brownies into pieces.

  • 2 very ripe bananas

CRUST INGREDIENTS

  • 1/2 cup raw almonds
  • 1/4 cup desiccated coconut
  • 1/2 cup oatmeal
  • 5 dried dates
  • 3 tablespoons of almond milk
  • a pinch of fine sea salt

METHOD

  1. Line a round cake pan with parchment paper or use a silicone mold.
  2. Blend the oatmeal, pitted dates, dried coconut, almonds and salt with a food processor at the highest possible speed.
  3. Reduce the speed of the food processor and add the almond milk. Mix until a sticky mixture forms.
  4. Pour the mixture into the mold and press it with a spoon or your fingers.

CREAM INGREDIENTS

  • 1 cup raw cashew nuts (soaked in water overnight)
  • 1/2 cup semolina (boiled for 10 minutes)
  • 1/3 cup melted coconut oil
  • ¼ cup almond milk
  • ½ cup agave syrup

METHOD

  1. Cook semolina over medium heat for 10 minutes (or according to package directions).
  2. If any lumps appear, blend it further with a hand mixer.
  3. Let the semolina cool.
  4. Drain the cashews and blend them together with the almond milk, coconut oil and agave syrup.
  5. Add the resulting mixture to the semolina and whisk.
  6. Whisk the mixture until a smooth cream is formed.
  7. Pour the cream over the crust and spread it evenly.
  8. Place in the freezer for at least 3 hours, but ideally overnight.
TIP : Blend the raspberries together with a teaspoon of agave syrup to make a puree. Once you’ve sliced the cheesecake, garnish it with raspberry puree and top with more fresh raspberries.

Gluten-free vegan gingerbread

What is used in baking vegan cookies?
