Cauliflower on the brain with bacon

Prepare a cauliflower brain with delicious bacon. You won’t spoil anything, on the contrary, you will take this dish to a higher level.

Ingredients

  • 800g of cauliflower
  • 200g of bacon
  • 1 bunch of spring onions
  • 50g of butter
  • 4-5 eggs
  • 1 tablespoon chopped parsley or chives
  • Cumin, salt, pepper (to taste)

Method

  • Put a steamer in a pot, add water and bring to a boil.
  • Divide the cauliflower into florets, clean, put on the steamer, cover with a lid and cook for about 5 minutes.
  • Then cut the cauliflower into even smaller pieces.
  • Clean the spring onion. Finely chop the white part and the green into coarse pieces.
  • Cut the bacon into thin strips, put in a pan with heated butter and fry until pink.
  • Add finely chopped onion and part of green nati, crushed cumin and saute for a while.
  • Then add the cauliflower, beaten eggs, salt and pepper. Cook the eggs while stirring constantly.
  • Finally, add the rest of the chopped onion, chives or parsley and add seasoning if necessary.
  • Mix and serve with fresh bread or potatoes.

Baked cauliflower as a brain

You can also prepare cauliflower brains baked. You can bake anything with cauliflower, there are no limits to your imagination. Add any other vegetables or maybe cheese to taste.

Ingredients

  • 800g of cauliflower
  • 50g of smoked bacon
  • 1 tablespoon lard or oil
  • 1 large onion
  • 3 eggs
  • 2 tablespoons breadcrumbs
  • Salt pepper

Method

  • Clean the cauliflower, cut into florets and put in salted boiling water. Boil for a while, but not too soft. It only takes 5 minutes.
  • Then take out the cauliflower and let it cool.
  • Cut the bacon into slices or cubes. Fry it in a pan with a spoonful of lard and finely chopped onion. Then shut down.
  • Finely chop the cooked cauliflower. Add salt, pepper, fried bacon with onions, whole eggs, breadcrumbs and mix everything.
  • Grease a baking pan or baking dish with butter and sprinkle with flour or line with baking paper.
  • Spread the cauliflower mixture inside. Bake at 180°C for approx. 30 minutes – watch.
  • Serve with boiled potatoes.

Cauliflower brain with cheese

A traditional dish that can be enhanced with cheese. Try this delicious and very quick dish!

Ingredients

  • 800g (1pc) cauliflower
  • 4 eggs
  • 50g grated cheese (Parmesan, Gouda, Eidam,…)
  • 1 spring onion
  • 50g of butter
  • Salt, pepper, cumin (to taste)
  • Chives for sprinkling

Method

  • Clean the cauliflower, cut it into florets and boil it in salted water with cumin.
  • Then strain and finely chop the cauliflower.
  • Heat the butter in a pan, foam the onion (including the sauce), add the chopped cauliflower and sauté for a while.
  • Mix in the egg and let it set. Then stir.
  • Finally, sprinkle grated cheese, mix and turn off the heat.
  • Serve garnished with chives with potatoes and vegetables.

A classic recipe for cauliflower brain with eggs. It’s really a fast food that fills you up.

Ingredients

  • 1 piece of cauliflower
  • 4 eggs
  • 3 onions
  • Salt, pepper, cumin (to taste)
  • Frying oil

Method

  • Cook the cleaned cauliflower, cut into florets, in salted water. Cook for a maximum of 10 minutes.
  • Then drain the water and let the cauliflower cool.
  • Finely chop the onion.
  • Mash or chop the cooled cauliflower into small pieces.
  • Fry the onion in a pan, then add the mashed cauliflower.
  • Finally, beat the eggs, salt and pepper and let them combine, stirring occasionally.
  • Serve the cauliflower brain with potatoes, sprinkled with chives or parsley.
