Creamy flaky soup with vegetables
A hearty creamy soup full of oatmeal and vegetables is great especially on cold days.
Ingredients:
- 1/2 cup oatmeal
- 1 cup fresh or frozen corn
- 1 cup chopped green beans, fresh or frozen
- 1 cup vegetable broth
- 4 cups low-fat milk
- 1 onion
- 1 stalk of celery
- 1 carrot
- 1 Tbsp butter
- 1 clove of garlic
- 1/2 teaspoon dried thyme
- 1/2 teaspoon of salt
- freshly ground black pepper
Method:
- Heat the oil in a pot or pan.
- Softly fry diced onion, celery and carrot in oil.
- Add the butter, crushed garlic and oatmeal.
- Saute everything for about a minute, stirring constantly.
- Add stock and stir until almost absorbed.
- Stir in corn, green beans, milk, thyme, salt and pepper.
- Bring to a boil and cook, uncovered, for approximately 5 minutes.
- Remove from heat, taste and add spices if necessary.
- Let stand for 5 minutes and stir before serving, the soup will thicken further.
This flaky soup tastes great on its own or with homemade pastries.

Healthy oatmeal soup
You can make this recipe special by adding cheddar cheese, which will give the soup a very delicious and unusual taste. Try it out!
Ingredients:
- 1/2 cup oatmeal
- 1 cup chopped mixed vegetables (beans, peppers, carrots, peas, corn)
- 1/4 cup chopped onion
- 3 cloves of garlic
- 1 bay leaf
- 2 spring onions
- 1/3 teaspoon of Italian seasoning
- a pinch of nutmeg
- 1 and 1/2 cups of milk
- 1 cup of water
- 1 tbsp olive oil
- 1/4 teaspoon of sugar
- salt
- cheddar cheese for sprinkling (optional)
Method:
- Heat the olive oil in a saucepan, add the bay leaf, finely chopped garlic, onion and the white part of the spring onion.
- Sauté until the onions are translucent.
- Then add the mixture of chopped vegetables and saute it for a few minutes.
- Then add the oatmeal, water, milk, salt, sugar and Italian seasoning
- Cook on low heat until the oatmeal is cooked.
- Serve garnished with green scallions, a pinch of nutmeg and sprinkled with cheddar cheese.
This flaky soup tastes great with fresh bread, you can also use chopped chives to garnish.

Hearty flaky soup with chicken
Coconut milk is in Indian and Thai cuisine, try using it in this recipe as well.
Ingredients:
Chicken
- 1000 g of chicken breast
- 1/2 teaspoon chili
- 1/2 teaspoon ground cumin
- 1 teaspoon coriander
- salt pepper
Soup
- 1 and 1/2 cups rolled oats
- 1/4 cup coconut milk
- 3 cups of water
- 1 onion
- 1 cup (carrots, beans, corn and peas)
- 2 cloves of garlic
- 1/2 teaspoon chili
- 1/2 teaspoon coriander
- 1/4 teaspoon of turmeric
- 1/2 tbsp lemon juice
- 1 tbsp of oil
- salt
- chopped cilantro for garnish
Method:
- Mix the chicken breasts with the spices.
- Cook the meat in a pot of water until the water boils and the chicken turns a light brown color.
- Allow the meat to cool, then shred with a fork.
- Heat the oil in a saucepan.
- Add chopped onion and garlic, salt and sauté for a minute.
- Add the chopped vegetable mixture and cook, covered, for a few minutes until the vegetables are tender.
- Put the shredded cooked chicken in the pot as well.
- Mix thoroughly.
- Add the oatmeal and sauté for a few minutes.
- Season with chilli, coriander, turmeric and salt, mix well.
- Add water and boil for a few minutes.
- Then add lemon juice and coconut milk.
- Mix thoroughly and cook for a minute.
- Taste and add more salt if needed.
- Garnish with cilantro and serve.
In addition to cilantro, this flaky soup can also be served with fried onions.

Delicious soup with oatmeal, ginger and mushrooms
A very interesting tasting soup that combines oatmeal, ginger and mushrooms.
Ingredients:
- 100 g of oatmeal
- 200 g of fresh mushrooms or champignons
- 700 ml of water
- 1 red onion
- 1 ginger
- 4 cloves of garlic
- 1 teaspoon of salt
- 1 teaspoon of pepper

Method:
- Heat the oil in a saucepan.

Icelandic flaky soup
Flakes can be combined with a whole range of vegetables, in this recipe, for example, with cauliflower, cabbage or leeks. Each additional vegetable gives the soup a slightly different taste.
Ingredients:
- 1/4 cup oatmeal
- 6 cups of vegetable broth
- 1 onion
- 1 leek
- 3 cloves of garlic
- 8 mushrooms
- 3 carrots
- 2 potatoes
- 2 cups cauliflower florets
- 1 cup finely chopped cabbage
- 1 bay leaf
- 3 tablespoons of olive oil
- salt pepper
Method:
- Heat the oil in a saucepan and fry the chopped onion and leek in it for approximately 5-6 minutes.
- Add garlic and sliced mushrooms, cook for another 2 to 3 minutes.
- Add the chopped carrots and sauté for 1 to 2 minutes.
- Then pour 6 cups of stock over everything.
- Add the chopped potatoes, cauliflower and bay leaf.
- Bring the mixture to a boil.
- Close the pot with a lid and cook on low heat for about an hour.
- Then stir in the oatmeal and cabbage and continue cooking for 10 to 15 minutes.
- Season with a few pinches of salt and serve with freshly ground black pepper.

Diet flake cream with leek
A dietary version of the soup, with only a few ingredients, which was traditionally served in Ireland during Lent.
Ingredients:
- 1 Tbsp butter
- 3 large leeks
- 1/2 cup oatmeal
- 4 cups chicken stock
- 1 and 1/2 cups of milk
- pepper
- 2 Tbsp fresh chives for garnish
Method:
- Melt the butter in a saucepan over low heat and add the chopped leeks.
- Cook, stirring occasionally, until the leeks are tender, about 15 minutes.
- Add stock and milk, increase heat to high and bring to a boil.
- Add oatmeal and black pepper to taste.
- Bring to a boil again, stirring occasionally, reduce heat to low.
- Cover and cook until the oatmeal is tender, about 40 minutes.
- Garnish with chopped chives before serving.

Quick soup with flakes and eggs
Try the unconventional combination of oatmeal, eggs and soy sauce. You will be pleasantly surprised!
Ingredients:
- 4 cups of vegetable broth
- 1/2 cup oatmeal
- 2 eggs

- pepper, salt
Method:
- Bring the vegetable broth to a boil in a pot.

- Stir regularly.
