Excellent waffles with chocolate and raspberries

For lovers of chocolate cakes, this recipe will be a real luxury. The dough has an excellent taste, a great texture and they are amazingly soft after baking.

  • 460 g of chocolate cake mix (the RUF brand was used in the recipe)
  • 3 eggs
  • 200 g whipping cream (35%)
  • 2 cups freeze-dried raspberries
  • 1/4 cup powdered sugar
  • 1/2 cup mascarpone
  • 1 tablespoon of vanilla extract
  • 1 and 1/2 cups cream (12%)
  • 2 handfuls of milk chocolate chips
  • 1/2 cup fresh raspberries

  • Pour the cake mixture into a bowl, add eggs and 35% cream and mix thoroughly.
  • Preheat the waffle maker and pour 1/3 cup of batter into the center of the waffle maker at a time and cook until the waffle is browned, about 1 and 1/2 minutes.
  • Remove and place on a kitchen rack. This is how we process all the dough and then let it cool completely.
  • All together, the dough should be enough for 8 waffles.
  • Pour the freeze-dried raspberries into the blender jar, add the sugar and blend until they are like dust.
  • Add mascarpone, vanilla extract, a cup of cream 12% and whip to a thick creamy consistency.
  • Pour the chocolate chips into a bowl and heat 1/2 cup of 12% cream in a small saucepan over medium heat so that small bubbles start to form on the surface and the cream begins to boil a little.
  • Pour the heated cream over the chocolate chips and stir until the chocolate melts and the mixture is pretty smooth.
  • We prepare a cake stand or a serving plate and start layering.
  • Place the waffle on a plate, spread a layer of raspberry cream around the edges so that there is an average 3-4 cm space in the middle, into which we pour 1 spoonful of the chocolate mixture.
  • We cover with another waffle and proceed in the same way until we run out of waffles, decorating the last waffle with cream in the middle and decorating with the remaining chocolate.
  • We can also dust with powdered sugar.

Tip: Eggs and whipping cream are the ingredients needed to process the boxed cake mix of the given brand, if we use another brand, we must adapt the ingredients to the instructions on the package.

An easy gluten-free dessert

It is also possible to make delicious dough for homemade waffles without gluten. With this recipe, you are sure that they will be beautifully light, crispy on the surface and fluffy on the inside.

  • 1 and 1/2 cup oat flour
  • 2 teaspoons of baking powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground cinnamon
  • 3/4 cup almond milk
  • 1/4 cup coconut oil
  • 2 large eggs
  • 2 tablespoons of maple syrup
  • 2 teaspoons of vanilla extract

  • Mix oat flour, baking powder, salt and cinnamon in a bowl.
  • Take another bowl and add almond milk, warmed coconut oil, eggs, maple syrup, vanilla extract and whisk carefully.
  • If the coconut oil solidifies when it hits the other wet ingredients, heat it all up in the microwave to re-melt it.
  • Pour the wet mixture into the dry ingredients and mix thoroughly with a wooden spoon.
  • Once the dough is ready, let it rest for 10 minutes as the oat flour needs to absorb the moisture.
  • Turn on the waffle maker and let it heat up. Then we set the temperature to medium.
  • We mix the dough again with a spoon and with its help we apply enough dough to cover the middle space of the waffle iron.
  • Cover the lid and bake until golden so that the waffle is crispy.
  • Spread foil or baking paper on the work surface and place the waffles side by side on it. We never just put on each other, otherwise they lose their crunchiness.
  • Top the finished waffles with warmed Nutella, maple syrup or perhaps nut butter or chocolate glaze. In short, anything we can think of.
