Ingredients for sponge cake
- 280 g plain flour
- 250 g of powdered sugar
- 250 g of softened butter
- 4 eggs
- 1 teaspoon of vanilla extract
- 1/2 package of baking powder
- 100 ml of strong black coffee
- 85 g coarsely chopped nuts (walnuts, hazelnuts, almonds,…) + for sprinkling
Ingredients for the filling
- 100 g of powdered sugar
- 150 ml whipping cream
- 100 g of mascarpone
Method
- First, preheat the oven to 180°C. Grease two cake tins with a diameter of 20 cm with butter and sprinkle with flour. Set aside 2 tablespoons of coffee for the filling.
- In a large bowl, beat together the butter, flour, sugar, baking powder, eggs, vanilla and half of the coffee. Beat with an electric mixer until lumps disappear and the dough is pliable and smooth.
- Stir in the finely chopped nuts, then divide into molds and top one half with coarsely chopped walnuts.
- Bake them for 25-30 minutes until golden and puffed up. Test with a toothpick to see if the biscuits are ready.
- Drizzle the rest of the coffee over the cake you didn’t sprinkle with nuts. Leave both sponge cakes to cool.
- Meanwhile, prepare the filling by whisking together the icing sugar, cream and mascarpone. Then mix in the reserved 2 tablespoons of coffee.
- Spread the filling on the cooled sponge, then cover with a second sponge sprinkled with nuts.
- You can serve the finished cake.

Light walnut cake without flour

Ingredients
- 300 g ground nuts
- 150 g of powdered sugar
- 5 eggs (separate the yolks from the whites)
- 1 teaspoon of baking powder

Method
- Preheat the oven to 180°C.
- Beat the egg whites in a bowl, but not completely stiff. Add sugar.
- Then carefully mix in the egg yolks with ground nuts and baking powder.
- Pour the resulting dough into a greased cake tin and smooth it out. Place in the preheated oven and bake for about 35 minutes. Then test with a toothpick to see if the dough is ready.
- Let the sponge cake cool, spread with whipped cream, sprinkle with grated chocolate and nuts. You can sprinkle the cake with anything you like.

- In the meantime, beat the cream cheese with the butter and vanilla extract in a bowl. Stir in the orange juice, powdered sugar and finally add the cream.
- Spread the resulting glaze evenly on the cooled sponge cake and sprinkle with the remaining chopped nuts.
- Serve the finished cake and keep it covered in the fridge.

- 225 g plain flour
- 75 g of sugar
- 100 g of powdered sugar
- 175 g softened butter

- 50 g chopped pecans
- 1/2 teaspoon ground cinnamon

- 25 g of dried cranberries
- 25 g pecans
Method
- Heat 150g chopped dried apricots, 75g dried cranberries and 150ml orange juice in a small saucepan. Bring to the boil, then remove from heat and allow to cool.
- Grease the bottom of a round mold and sprinkle with flour. Preheat the oven to 180°C.
- Mix 100 g of caster sugar, 75 g of granulated sugar and 175 g of softened butter in a bowl. Beat until the mixture is fluffy.
- Then add the eggs one at a time and beat well. Gradually add 225 g of plain flour.
- Then mix in the cooled fruit and chopped pecans. Finally, mix in the baking powder and ground cinnamon.
- Pour the resulting dough into the prepared cake tin and bake for approx. 50 minutes until golden. Test with a toothpick whether the dough is cooked.
