Ingredients:

  • 2 cups shelled walnuts
  • 6 eggs
  • 1 cup of sugar
  • 1 cup semi-coarse flour
  • ½ teaspoon of baking powder

For the cream:

  • ⅔ cup sweetened condensed milk
  • 2 yolks from large eggs
  • 1 tablespoon of water
  • ½ teaspoon of vanilla extract
  • 1 and ½ cups softened butter

For the syrup:

  • ¼ cup sugar
  • 1 cup of water
  • 3 tablespoons of rum

For the frosting (who wants):

  • 100 g of cooking chocolate
  • ½ cup whipping cream

Method:

  • Roast the nuts in a dry pan. It takes about 5 minutes (they will start to smell when they are done).
  • When they are cool, you can blend them finely.
  • Beat the eggs with a whisk. After a minute, sprinkle in the sugar and continue beating.
  • Separately, mix the flour with the baking powder, and then mix it into the egg mixture in three stages. Finally, stir in ¼ cup of chopped nuts.
  • Pour the dough into a larger tray lined with baking paper and bake at 175°C for about 25 minutes.

Preparing the syrup:

  • Boil water and sugar to a syrup consistency. It takes a few minutes. Once it hardens, it’s done. Add rum after cooling.
  • Spread the finished syrup over the baked and cooled carcass.

Preparation of the cream:

  • Beat the egg yolks together with the sugar, condensed milk and vanilla until smooth.
  • Then move this mixture over the water bath and continue whisking for another 5-7 minutes.
  • Cool the whipped mass in cold water and stir to cool.
  • Meanwhile, beat the butter until fluffy.
  • Add the cooled mixture to the butter and beat for about 2 more minutes.
  • Set 1 cup of cream aside and add ¼ cup of nuts to the rest of the cream.
  • Divide the finished and cooled carcass, smeared with syrup, into 2 halves.
  • Spread one half with nut cream and put the second part of the carcass on top.
  • Use the remaining 1 cup of cream on the sides and top of the cuts.
  • Put them in the fridge to cool for 30 minutes.
  • If you don’t want to use the chocolate coating, just decorate with nuts.

Preparation of chocolate coating (optional):

  • Break the chocolate into cubes and bring to a boil together with the cream. Let it heat up for a while, then remove from the heat.
  • Allow the glaze to cool for another 15 minutes, stirring occasionally, and then pour it over the top of the slices.
  • Use the rest of the nuts to sprinkle on the chocolate frosting.
  • Leave to cool, and then you can serve.
