  • 2 tablespoons chopped fresh parsley

Method

  1. Put 2 tablespoons of oil in a pan, heat it up and add the chopped onion.
  2. Add half the salt and pepper, sauté until golden, then transfer from the pan to a bowl.
  3. Wash the chicken liver and always cut it in half.
  4. Add the remaining tablespoon of oil to the pan and place the pieces of liver in the heated oil.
  5. Add the rest of the salt and pepper and sear on all sides.
  6. The liver should remain slightly pink inside.
  7. Add the Madeira to the liver in the pan, add the fried onion and heat briefly.
  8. Serve with chopped parsley and garnish with a boiled egg cut into eighths.
  9. As a side dish, you can serve toast or toast, or fried potatoes or a tortilla .

  • 500 g of chicken liver
  • 2 onions
  • 2 dcl red wine
  • 3 spoons of onion marmalade
  • 1/2 tsp ground red pepper

  • cane sugar to taste (if needed)

Method

  1. Wash, devein and cut the liver into medium pieces.
  2. Put the liver in a pan and fry it on all sides, after frying put it in a bowl.
  3. The liver should remain slightly pink.
  4. Add the remaining oil, heat and add the onion cut into small slices, fry until golden brown.
  5. Add the ground pepper and immediately pour in the wine, add the onion marmalade, salt and pepper.
  6. Boil sufficiently, in case of high acidity, you can add sugar to taste.
  7. Add the fried liver to the sauce and reheat.
  8. Serve the roasted liver with mashed potatoes.
