  • 3 tablespoons of oil
  • 3 thinly sliced onions
  • 3/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 500 g of chicken liver
  • 1/2 cup Madeira wine
  • 1 hard-boiled egg
  • 2 tablespoons chopped fresh parsley


  1. Put 2 tablespoons of oil in a pan, heat it up and add the chopped onion.
  2. Add half the salt and pepper, sauté until golden, then transfer from the pan to a bowl.
  3. Wash the chicken liver and always cut it in half.
  4. Add the remaining tablespoon of oil to the pan and place the pieces of liver in the heated oil.
  5. Add the rest of the salt and pepper and sear on all sides.
  6. The liver should remain slightly pink inside.
  7. Add the Madeira to the liver in the pan, add the fried onion and heat briefly.
  8. Serve with chopped parsley and garnish with a boiled egg cut into eighths.
  9. As a side dish, you can serve toast or toast, or fried potatoes or a tortilla .

Roasted chicken liver in wine

The combination of chicken liver, red wine, onion and onion marmalade is absolutely delicious! Serve with mashed potatoes and your family will be delighted.


  • 500 g of chicken liver
  • 2 onions
  • 2 dcl red wine
  • 3 spoons of onion marmalade
  • 1/2 tsp ground red pepper
  • 1/2 teaspoon salt and pepper
  • 2 tablespoons of oil
  • cane sugar to taste (if needed)


  1. Wash, devein and cut the liver into medium pieces.
  2. Put the liver in a pan and fry it on all sides, after frying put it in a bowl.
  3. The liver should remain slightly pink.
  4. Add the remaining oil, heat and add the onion cut into small slices, fry until golden brown.
  5. Add the ground pepper and immediately pour in the wine, add the onion marmalade, salt and pepper.
  6. Boil sufficiently, in case of high acidity, you can add sugar to taste.
  7. Add the fried liver to the sauce and reheat.
  8. Serve the roasted liver with mashed potatoes.

Turkey liver on mushrooms

Prepare this delicious turkey liver and mushroom recipe, which is quick and easy and will surely become your favorite dinner or lunch.


  • 1 teaspoon rice or whole wheat flour
  • 1/2 teaspoon of salt
  • 1/2 teaspoon freshly ground pepper
  • 500 g of turkey liver
  • 3 tablespoons of olive oil
  • 1 cup sliced mushrooms (maybe champignons too)
  • 1 spring onion
  • 200 ml of chicken stock
  • parsley for garnish


  1. Heat a tablespoon of oil in a pan.
  2. Wash, devein and cut the liver into medium pieces.

  4. The liver should remain slightly pink.
  5. Add the remaining oil, heat and add the chopped spring onions, saute until tender.

A quick and simple dinner that is also delicious is every cook’s dream come true. Try this recipe for turkey livers served on toast with caramelized onions and you will be amazed!


  • 500 g of turkey liver
  • 1 tablespoon plain flour
  • 4 onions
  • 4 tablespoons of butter
  • 1 tablespoon of vegetable oil
  • 1 spoon of sugar
  • 4 cl of cognac
  • 8 slices of toasted bread
  • salt
  • peppers


  1. Wash the liver, dry it and cut it into 8 thin slices.
  2. Peel the onion and cut into strips.
  3. Heat 2 tablespoons of butter in a large pan, add the onion and sauté until caramelized.
  4. Sprinkle with sugar, brush with cognac and cook until the cognac has evaporated and the onions are crispy.
  5. Set aside.
  6. Heat the remaining butter and oil in a pan.
  7. Dust the liver with flour and saute for 2-4 minutes over medium-low heat.
  8. Toast the bread, add the onions and liver and serve.

  • 2 tablespoons of vegetable oil
  • 500 g of chicken liver, chopped and cleaned
  • 1 tablespoon of ghee
  • 2 cloves of garlic, pressed
  • 1/2 – 1 red chili pepper, finely chopped
  • juice of 1/2 lemon
  • 3 tablespoons of fresh chopped parsley
  • sea salt and pepper to taste


  1. Heat a large skillet over high heat.
  2. Add oil and chicken livers and fry until golden on both sides.
  3. Add the ghee, garlic, chilli and lemon and allow to saute for another minute or two, then season.
  4. Serve sprinkled with fresh parsley.
