Ingredients:

  • 1 cup roasted and salted almonds
  • 5 tablespoons of powdered sugar
  • ¾ cup softened unsalted butter
  • 1 teaspoon of quality vanilla extract
  • 1 and ½ cup plain flour 204 g
  • ¼ teaspoon salt

To finish:

  • 4 cups of powdered sugar

Method:

  • Preheat the oven to 165 degrees and prepare two trays, which we will line with baking paper.
  • Place almonds and 1 tablespoon of powdered sugar in the bowl of a food processor. Using the pulse button, blend to a fine powder and pour into another bowl.
  • Return the bowl of the robot to the base and add the butter, the remaining 4 tablespoons of powdered sugar, vanilla extract and beat with the whisk attachment until the mixture is light and fluffy, about 3-4 minutes.
  • Using a spatula, scrape the butter mixture from the walls of the container and add the sifted flour and salt and mix on low speed to combine everything.
  • Using a spoon, take pieces of the dough and form about 3 cm large balls, which we gradually place on the prepared baking sheets, about 2 cm apart.
  • Place in the preheated oven and bake for approximately 22 to 26 minutes, while halfway through baking, carefully remove the baking sheet and turn it so that the cookies bake evenly.
  • Remove from the oven and transfer to a kitchen rack, where we let the cookies cool for 3 minutes. Then we immediately roll them in powdered sugar so that a sufficient amount of it adheres.
  • Let it cool to room temperature and then roll it once more in powdered sugar.
  • Store this simple wedding cookie in an airtight container at room temperature. This way it will last up to 1 week.

Tip: Are you a fan of cereal and want to have it at your wedding? Then prepare the cereal mixture in bowls or cups.

What you will need: 6 cups of honey and cinnamon flavored cereal, 340g of vanilla icing, 2 tablespoons of vegetable oil, 290g of pretzels in white icing and 1 and 1/2 cups of almonds in white chocolate (or perhaps tiramisu flavor, milk etc.).

How to do it:
We will prepare a higher baking pan with a size of approx. 15×10 cm and line it with waxed paper. Put the cereal in a large bowl and set it aside for now. We take a bowl that can be put in the microwave oven, put the glaze, oil in it and heat it on High for 1 minute.

Take it out, mix it, and if the frosting is not very liquid, put it back in for another 20 seconds so that the frosting is completely dissolved. Mix the glaze dissolved in this way and pour it over the cereal. Stir until all are coated with the glaze.

Transfer to a baking tray and spread over the entire surface. Put it in the refrigerator and let it cool for 10 minutes until the sugar coating hardens, or a little longer.

As soon as the glaze hardens, take the baking pan out of the fridge, break the cereal with the glaze into bite-sized pieces, sprinkle the pretzels with almonds, mix and divide into decorated cups, glasses or bowls. Well, we have yet another goodie on the wedding table.

Modern mint flavored wedding cookies

Cream cheese is perfect for weddings and using it in something sweet is not a bad idea at all. They actually taste like a menthol candy, but have a soft creamy texture and melt perfectly in your mouth.

The advantage is that you can choose their color according to the spirit of the whole feast and it certainly doesn’t have to be just the wedding one. All you have to do is change the food coloring and instead of pink, which is used in this recipe, go for purple, green or even gold.

It depends on what occasion you are preparing them for. You can easily prepare them for a children’s party, just choose green or red, for example. And what is essential? They don’t bake!

Ingredients:

  • 170 g of soft cream cheese
  • 2 tablespoons of softened butter
  • 5-5 and 1/4 cup powdered sugar
  • 4 drops peppermint oil (or 1/2 tsp peppermint extract)
  • 1/8 teaspoon of vanilla extract
  • Any food coloring

Method:

  • In a large bowl, mix the cream cheese, butter, vanilla extract and powdered sugar.
  • Mix thoroughly until everything is combined.
  • Add peppermint oil drop by drop and then the dye. If you want, you don’t have to add coloring at all and leave the candy white.
  • Finally, we mix carefully and take equal-sized pieces of dough.
  • We roll small balls and place them on wax paper.
  • We then press each ball with a fork, which we previously coated in powdered sugar.
  • Let it dry on wax paper for about 2 hours and then put it in the fridge.

Classic wedding cakes

Now that we’ve started with the example of wedding sweets, we definitely can’t leave out a delicacy that is a must at any wedding. These cookies are mainly used as a source of income, because they are simply delicious, delicate and absolutely perfect.

Ingredients:

For the dough:

  • 500 g semi-coarse flour
  • 300 g plain flour
  • 200 g coarse flour
  • 200 g of granulated sugar
  • 500 ml of milk
  • 300 g of unsalted butter
  • 1 and ¾ cubes of yeast
  • 1 teaspoon of granulated sugar
  • 6 teaspoons of lukewarm milk for yeast
  • 7 egg yolks
  • 2 bags of vanilla sugar
  • 1 whole egg
  • 1 tablespoon of salt
  • Lemon peel from 2 chemically untreated lemons

For the cheese filling (for 30 scones):

  • 3 cubes of cottage cheese
  • 5 spoons of granulated sugar
  • 3 egg yolks
  • 1/2 spoon of potato starch
  • 70 g peeled and halved almonds for decoration (or we can decorate with a little marmalade)

For the jam filling (for 15 cakes + jam for decorating cheesecakes):

  • 750 g of homemade jam
  • 1 spoon of granulated sugar
  • 1 tablespoon of potato starch
  • Rum to taste

For the poppy seed filling:

  • 200 g of ground poppy seeds
  • 400 ml of milk
  • 4 spoons of granulated sugar
  • 2 tablespoons of homemade jam
  • Rum to taste
  • 70 g peeled and halved almonds for decoration (we can also use cherries)

On a small scale:

  • 250 g semi-coarse flour
  • 100 g granulated sugar
  • 100 g of softened butter

Method:

  • Crumble room temperature yeast into a small bowl, add sugar and milk. Cover and let the yeast rise in a warm place.
  • Sift the flour into a large bowl, add salt, one egg yolk and lemon zest. Heat the milk so that it is lukewarm and pour it into the mixture.
  • We beat granulated sugar (200 g), vanilla sugar, 5 egg yolks together with 250 g of butter. Add the whipped mixture to the flour and the risen yeast.
  • We make a smooth dough, which we either process for 20 minutes by hand, or put it in the container of a food processor, if we have one, so that it processes all the ingredients.
  • During this time, you can dust with plain flour to prevent the dough from sticking. Leave to rise in a warm place for about 2 hours.
  • On the board, divide the finished dough into equal-sized pieces, make balls into which we shape a well and fill it with the chosen filling, which we will prepare while the dough has risen.
  • Cook the poppy seeds with milk to a thick paste, then add all the other ingredients and mix thoroughly.
  • For the cottage cheese and jam filling, it is sufficient to carefully mix the individual ingredients and fill the cakes.
  • We work the ingredients into the crumb with our fingers so that everything comes together and forms small crumbs with which we decorate the cakes.
  • Preheat the oven to 170 degrees and prepare baking trays, which we will line with baking paper.
  • Finally, mix 2 egg yolks with milk and brush them onto the cakes placed on the trays.
  • Bake in a preheated oven at 170 °C for about 12 minutes. Melt the remaining 50 g of butter and as soon as you take out the finished baking sheet, brush the baked cakes with butter for an even better taste.

This wedding delicacy will delight not only your taste buds, but also please the eye. You can use different types of cookie cutters, be it hearts, doves, lip shapes, bells and many others, whose shape resembles love and thus the most important day of your life.

Ingredients:

For the dough:

  • 3/4 cup softened butter
  • 1 cup of sugar
  • 2 large eggs
  • 1 teaspoon of almond extract
  • 2 and 1/2 cups plain flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of salt

For the frosting:

  • 1/2 cup softened butter
  • 4 and 1/2 cups powdered sugar
  • 1 and 1/2 teaspoons of vanilla extract
  • 5 to 6 tablespoons of milk
  • Food coloring of your choice
  • Edible glitter and colored sugar
  • Sprinkles (optional)

Method:

  • In a large bowl, beat the cream, butter and sugar until light and fluffy.
  • Add eggs and mix. In another bowl, mix the flour with the baking powder.
  • We will gradually add the flour mixture to the cream mixture and mix thoroughly.
  • Once all the ingredients are combined, cover the place and put it in the refrigerator for 2 hours.
  • On a well-floured work surface, roll out the dough to a 0.5 cm thick sheet.
  • Using cutters, we create various shapes and place them on a baking sheet lined with baking paper. We will leave a gap between the individual pieces so that it does not stick together.
  • Place in an oven preheated to 180 degrees and bake for about 6 to 8 minutes.
  • Transfer the finished candy to a kitchen rack and let it cool completely.
  • In the meantime, we will prepare a bowl in which we will beat the butter so that it is light and fluffy.
  • Stir in powdered sugar, vanilla extract and milk. Mix until the frosting has a smooth consistency.
  • Add food coloring of your choice and spread it on the cooled candy.
  • Mix equal amounts of edible glitter and colored sugar. Sprinkle all the candy pieces with this mixture.
  • We can also sprinkle with various decorations, but it is not necessary.

Wedding hearts

Ingredients:

For the candy:

  • 2 cups plain flour (plus extra for dusting)
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1/2 cube fresh unsalted butter (must be at room temperature)
  • 1 cup powdered sugar
  • 1 large L-sized egg
  • 1 teaspoon of quality vanilla extract

For the royal icing:

  • 225 g of powdered sugar
  • 1 large egg white
  • 1/4 cup of water
  • Pink gel food color

Method:

  • Mix flour, baking powder and salt in a bowl.
  • Put the butter and sugar in the bowl of a mixer and beat on medium-high speed until the mass is fluffy and light in color.
  • Add eggs with vanilla extract and beat. Then reduce the speed to minimum and gradually add the flour mixture.
  • Beat until everything is combined and a smooth dough is formed. We divide it into two parts, squeeze it slightly and wrap it in food foil. Put in the fridge for about 20 minutes.
  • Preheat the oven to 175 degrees and prepare two trays lined with baking paper.
  • Roll out each part of the dough between a pair of floured parchments into 4 mm thick sheets and sprinkle with flour as needed.
  • Cut out the hearts and place them on the prepared baking sheets. If the dough is too soft, put it and the baking sheet in the refrigerator for 10 minutes. We will gradually process all the dough in this way.
  • Place in the preheated oven and bake for about 12 minutes, until the edges of the hearts acquire a golden hue. Turn the tray halfway through the baking process so that the cookies bake evenly.
  • Remove from the oven and leave to cool on a kitchen rack.
  • In the meantime, put the paddle attachment on the robot and put the icing sugar and egg white in the bowl. Beat at low speed.
  • Add 1/4 cup of water, increase the speed to medium and let it beat for about 10 minutes.
  • Then we reduce the speed to low speed and beat for about 1 more minute. This will rid the coating of air bubbles.
  • Put the frosting in a bowl and dip one heart at a time into it. Let the excess glaze drip off and gently tap it so that bubbles do not form.
  • Place them next to each other on a baking sheet or work surface and lightly paint them pink.

Ingredients:

  • 1 box of mixture for preparing the white cake body (450 g)
  • 1 cup plain flour
  • 1 cup granulated white sugar
  • 3/4 teaspoon salt
  • 1 and 1/3 cup water
  • 2 tablespoons of sunflower oil
  • 1 teaspoon of quality vanilla extract
  • 1 cup sour cream
  • 4 large egg whites

For decoration:

  • Sugar pearls
  • Whipped cream

Method:

  • Preheat the oven to 170 degrees and prepare a muffin tin, in which we will insert paper cups.
  • Put the mixture for the corpus, flour, sugar and salt in a large bowl and mix.
  • Add the remaining ingredients and beat with a hand mixer for 2 minutes or more until combined.
  • Fill the prepared cupcake molds with an ice cream scoop, filling them only about 3/4 full.
  • Bake for about 15 to 18 minutes, or until a skewer inserted into the center of the cake comes out clean.
  • Then remove from the oven and let cool completely. Using a decorating tip, spray whipped cream on each individual cupcake in a decorative pattern and sprinkle with sugar pearls.

Mini tartlets with fruit

This is a very fragile wedding cookie that is a big hit, because it can be prepared not only in this small version, but also in the classic large one as a regular dessert. Basically anything can be used as a cream, be it pudding, cottage cheese or even butter cream. There are no limits to imagination.

Ingredients:

For the tartlets:

  • 1 and ½ cups plain flour
  • ⅓ cup powdered sugar
  • ¼ teaspoon salt
  • ½ cup softened fresh butter
  • 1 egg yolk from a large egg
  • 1 tablespoon whipping cream (33%)

Cream filling:

  • 2 and ¾ cups of milk
  • ⅔ cup sugar
  • ¼ cup cornstarch
  • ⅛ teaspoon of salt
  • 4 egg yolks from large eggs
  • 2 tablespoons of fresh butter
  • 1 teaspoon of vanilla extract

Glaze:

  • ¼ cup currant jelly

For decoration:

  • Fresh fruit – strawberries, kiwi, blueberries, cherries, peaches, etc.

Method:

Preparation of tartlets:

  • Add flour, powdered sugar, salt to the bowl of a food processor and mix.
  • Cut the butter into slices and add to the flour mixture. Using the pulse button, mix several times until the mixture resembles oatmeal in consistency.
  • Add the yolk and cream and mix until everything starts to stick. When the mixture is dry, add a few more drops of cream.
  • Shape the dough into a roll, wrap it in cling film and refrigerate for at least 30 minutes.
  • If we use classic cupcake molds, we spray them with cooking oil, if we use silicone ones, we don’t need anything.
  • Divide the roll of dough into 12 equal parts and use the rolling pin to roll each part between two pieces of foil into a round cake that will be slightly larger than the cupcake form.
  • Press each round into the mold so that the dough is not too thin. If something overhangs, cut the dough so that it ends at the same time as the edge of the mold.
  • Place the cupcakes prepared in this way in the refrigerator, ideally overnight.
  • The next day, we put the molds on a baking sheet and line each one with aluminum foil and shape them according to the cupcake.
  • Preheat the oven to 200 degrees, then insert the cupcakes and bake for about 10 minutes.
  • After ten minutes, remove the foil and bake for another 4 minutes so that the tartlets get a golden color.

Cream filling and glaze:

  • Put milk, sugar, cornstarch, salt and egg yolks into the bowl of a food processor.
  • Mix for about 10 seconds and then pour into a two-liter glass bowl that is suitable for use in a microwave oven.
  • Place the bowl in the microwave on HIGH for 6-7 minutes. After 3 minutes, beat, put back in and then beat every minute.
  • If the cream is not thick after 7 minutes, put it back in the microwave for a few more minutes.
  • Remove the thick cream from the oven, add butter, vanilla extract and beat until the mixture is smooth.
  • Fill the cooled cupcakes with cream and decorate with chopped fruit.
  • Finally, melt the currant jelly in the microwave or on the stove and use a kitchen brush to rub each piece of fruit, thanks to which it will get the right shine.

Every wedding cake is something unique, and this applies doubly so. It is simple, tasty and very popular. In addition to weddings, it is also suitable for birthday parties or any party.

Ingredients:

For the dough:

  • 1 box of white cake mix
  • 1 cup plain flour
  • 1 cup powdered sugar
  • 3/4 teaspoon salt
  • 1 and 1/3 cup water
  • 1 cup sour cream
  • 2 tablespoons of vegetable oil
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of almond extract
  • 4 egg whites

Glaze:

  • 1/2 cup fresh unsalted butter
  • 2 and 1/2 cups powdered sugar
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of whole milk

For decorating:

  • 1 package of soluble white chocolate
  • 1 tablespoon of vegetable oil
  • Edible glitter in silver color

Method:

Preparing the dough:

  • Preheat the oven to 170 degrees and grease an 11×13 cm mold with butter.
  • Put the dry ingredients in a bowl and mix. In the second bowl, mix all the wet ingredients and add to the dry mixture.
  • Using a hand mixer, beat on low speed to mix and moisten the ingredients. Small lumps will form in places, but this is not harmful.
  • Pour the finished dough into the prepared mold and place in the preheated oven. Bake for about 25 minutes until the surface is golden.
  • Let it cool completely and in the meantime start preparing the frosting.

Preparation of the topping:

  • Put the butter, powdered sugar and vanilla extract in a bowl and beat with a hand mixer until the mixture is light and fluffy.
  • We will slowly start adding milk while constantly stirring until we get the right consistency. The frosting should be thick enough so that it does not run.

Making cake pops:

  • Blend the baked corpus in a food processor until crumbs form.
  • Mix in half of the frosting and start processing gradually. If necessary, we also add the remaining frosting. Mix thoroughly to form balls from the dough.
  • Using a spoon, take equal-sized pieces of dough and shape them into balls. Once we have processed all the dough/mass and put it in the fridge for 30 minutes to harden the balls.
  • Finally, melt the chocolate in the microwave. You need to add about 1 tablespoon of vegetable oil to one cup of chocolate, which will make the chocolate beautifully smooth.
  • We stick each ball on a stick, dip it in melted white chocolate and stick it in a base or just put it in a larger glass so that the icing dries a little.
  • Then dust with silver edible powder and let it set completely.
