Apple strudel from puff pastry

Do you remember grandma’s still warm apple strudel, which smelled the whole house? Prepare it for your family too.

Ingredients

  • Puff pastry
  • 4 apples, grated
  • 50g of raisins
  • 2 tablespoons of rum
  • 1 tablespoon of lemon juice
  • 1 teaspoon of ground cinnamon
  • 1/2 cup granulated sugar
  • 30g of finely chopped almonds
  • 1 teaspoon of vanilla extract
  • Breadcrumbs
  • 50g of melted butter

Method

  • Soak raisins in rum in a small bowl for 30 minutes. Then pour out the rum.
  • Grate the apples, mix with lemon juice, add cinnamon, sugar, raisins, almonds and vanilla extract.
  • On the line, roll out the dough into as thin a sheet as possible and brush it with a little melted butter.
  • Sprinkle the dough with breadcrumbs. Then spread the apple filling, being careful to keep the juice from the apples in the bowl.
  • Finally, form the strudel by rolling the dough with the filling several times. Close the ends of the strudel with a fork by pressing the edges together with the end of the fork.
  • Bake for about 30 minutes at 180°C and brush with the remaining butter during baking.
  • Make sure it doesn’t burn. Every oven bakes differently. After baking, leave to cool for 10 minutes, then sprinkle with powdered sugar and serve while still warm.

Yeast strudel with apples

You can also prepare leavened apple strudel from ripe apples. It is a bit more laborious, but the result is definitely worth it.

Dough ingredients

  • 0.5 kg plain flour
  • 100g of softened butter
  • 2 egg yolks
  • 1 cube of yeast
  • 100g granulated sugar + 2 spoons of yeast
  • 200 ml of lukewarm milk + 100 ml for yeast
  • Pinch of salt
  • 1 egg (for brushing)
  • Breadcrumbs

Ingredients for the filling

  • 5-8 apples
  • 1 vanilla sugar
  • Cinnamon to taste

Method

  • Pour 100ml of lukewarm milk into a small container/mug, add 2 spoons of sugar and crumble the yeast. Let the yeast rise for about 15 minutes.
  • Sift plain flour into a bowl, add sugar, egg yolks, melted butter and a pinch of salt. Finally, add the yeast and the amount of milk as needed (approx. 200ml, but it depends on the flour)
  • Knead the dough with your hands, which should not be sticky. Cover it with a towel and let it rise in a warm place for about an hour.
  • Meanwhile, peel the apples, remove the cores and grate them coarsely or cut them into small cubes.
  • Mix the apples with vanilla sugar and cinnamon. You can also add raisins.
  • Divide the risen dough into two parts and roll out thin sheets on a floured rolling pin.
  • Sprinkle each sheet with breadcrumbs, layer the apple filling and wrap carefully. Press the edges.
  • Place the rolls on a baking sheet lined with baking paper and brush with a beaten egg before putting them in the oven.
  • Bake at 180°C for about 25-30 minutes. After baking, let it rest for a while, then sprinkle with powdered sugar and serve.

Dough ingredients

  • 400g plain flour
  • 200g softened butter + for spreading
  • 150g plain yogurt (preferably Greek type)
  • 1 egg
  • Pinch of salt

Ingredients for the filling

  • 5-7 apples (optional)
  • 8 spoons of breadcrumbs
  • 1 vanilla sugar
  • 100g of sugar (to taste)
  • A spoonful of ground cinnamon

Method

  • Sift the flour onto the roll and add a pinch of salt. Make a pile of flour and make a well in the middle.
  • Crack the egg into the well and add the yogurt.
  • With a fork, mix the liquid ingredients with the flour into a thick paste.
  • Grate the butter on the flour and work everything with your hands into a soft, non-sticky dough. Add more flour as needed. Divide into 4 parts and let rest.
  • Meanwhile, peel and grate the apples. Fry the breadcrumbs dry in a frying pan.
  • On a floured rolling pin, roll out sheets of dough 2-3 mm thick, sprinkle with breadcrumbs and layer on the apples. (No juice)
  • Sprinkle with sugar and cinnamon. You can also add raisins or nuts.
  • Then wrap the dough and press the edges, bend the wrap inward.
  • Place the rolls on a tray lined with baking paper, brush with butter and bake in a preheated oven at 180°C for 25-30 minutes.
  • Sprinkle the baked strudel with powdered sugar and serve.

  • Roll out the puff pastry into a thin sheet of approx. 5 mm and place a layer of cooled custard on it. Sprinkle with breadcrumbs or ground biscuits.
  • Finally, layer an appropriate layer of grated apples.
  • Roll the dough into a strudel, press the edges together and place it on a baking sheet lined with baking paper. Then brush with beaten egg and bake in a preheated oven at 180°C for 25-30 minutes.
