However, you can make carp recipes at any time of the year.

Crispy carp fries after Třeboňsk
To begin with, we will warm up with a simple recipe made from carp in a popular way, which is known especially in Třeboňsk.
INGREDIENTS
- one boned and filleted carp (it can be a fillet as well)
- 2 cloves of garlic
- 2 spoons of soy sauce
- 1 teaspoon ground sweet paprika
- 1 teaspoon of honey
- 1 teaspoon of ground ginger
- 2 teaspoons of salt
For wrapping:
- solamyl
- plain flour
- ground sweet pepper
- dried garlic
METHOD
- Cut the carp into thin crosswise strips.
- Mix the marinade from pressed garlic, soy sauce, honey, paprika, ginger and salt.
- Put the carp in the marinade and let it marinate in the fridge, ideally overnight.
- Then we coat the fries in a mixture of flour, solamyl, paprika and garlic.
- Fry in hot oil until golden.

Honest carp fish soup
You will appreciate this carp fish soup not only at Christmas. It makes a perfect combination with root vegetables.
INGREDIENTS
For the broth:
- 250 g of carp bones (can also be the head without eyes)
- carp roe and milk (who likes)
- 100 g root vegetables (carrots, parsley, celery)
- 1 small onion
- 2 balls of black pepper
- 3 balls of allspice
- 2 bay leaves
- salt
- 1 liter of water
For the soup:
- 150 g of root vegetables
- 1 large onion
- 2 tablespoons of butter
- 2 tablespoons plain flour
- 100 g of carp, if necessary
- parsley
- a pinch of nutmeg
- pepper
- salt
METHOD
- Put the carp skeleton and head in a pot together with spices, cleaned and chopped vegetables, whole onions in their skins.
- Add water and salt.
- Bring the broth to a boil, reduce the heat after it reaches a boil and let it bubble for at least an hour.
- Then strain the broth.
- In the second pot, fry the soup base in butter.
- Sauté diced vegetables, including onions and roe and milk, then cover with flour, cover with broth, salt and pepper and cook until the vegetables are soft.
- If we use milkweed, after cooking, we peel it and cut it into pieces.
- Before the end, add nutmeg and parsley.

Baked carp in the oven on vegetables
This baked delicacy with a delicate cream sauce is also delicious.
INGREDIENTS
- 1 carp
- salt
- lemon juice
- parsley
- 2 sprigs of thyme
- 1 onion
- 1 carrot
- 1 leek
- ½ small celery
- 40 g of butter
- 125 ml of white wine
- 125 ml of water
- 125 ml whipping cream
- 1 egg yolk
METHOD
- We gut and clean the carp.
- Salt and pepper the whole thing, sprinkle with lemon juice and put chopped parsley and thyme inside.
- Fry diced vegetables in butter (leek in rounds, which we then add to the carp on a baking sheet).
- Cover everything with water and wine and bake in an oven heated to 180°C for about 40 minutes, basting occasionally.
- Towards the end, you can finely blend the vegetables from the sauce.
- Mix the cream with the yolk and gradually add the hot fish sauce to it.
- This is how we get a delicious cream sauce.

Christmas fried horseshoe carp

- 10 horseshoe carp
- 500 ml of milk
- 1 tablespoon of salt

METHOD
- Add salt to the milk and crush the garlic.
- Put the carp in this marinade and let it marinate the day before.
- Then we dry each horseshoe carp with a napkin, sprinkle with lemon juice and coat in flour, beaten egg and breadcrumbs or chips.
- Fry in hot oil slowly for about 5 minutes on each side.

Carp fish salad
Whether you have carp from the previous day or fresh, you can prepare this light salad.
INGREDIENTS
- 300 g carp fillets (or 300 g carp from Christmas Day)
- 1 cup of wine vinegar
- 1 cup of water
- 1 spoon of sugar
- 1 onion
- 1 carrot
- 2 pickles
- 5 balls of black pepper
- 5 balls of allspice
- 1 bay leaf
- salt
- 1 tablespoon of marjoram
- 1 heaping spoonful of white yogurt
METHOD
- Put water, vinegar, salt, sugar, bay leaf, black and allspice in a pot.
- Bring everything to a boil and cook for 5 minutes.
- Then add sliced onions and diced carrots to the vinegar water.
- Cook for about 10 minutes, then add the portioned fish (if you have fresh) and cook for another 8 minutes.
- If we have carp from the Christmas dinner, then we cut it into cubes and put it in the prepared varnish after cooking.
- Then put the pot aside and let it cool.
- Let it cool in the fridge until the next day.
- Everything falls apart beautifully.
- Then drain the fish and vegetables, remove the spices, add diced cucumber, mayonnaise and yogurt to the mixture.
- If necessary, season the salad with salt.

Grilled carp with herb butter
Have you got a taste for tender caper on the grill? Yes, you can enjoy it even in the middle of summer.
INGREDIENTS
- carp
- 250 g of butter
- a handful of dill
- a handful of parsley
- 5 cloves of garlic
- salt
METHOD
- Prepare the butter at least 45 minutes before grilling.
- Let it cool at room temperature first.
- We chop the herbs, press the garlic and mix everything into the butter, which we add salt to.
- Make a roll out of the butter, wrap it in cling film and put it in the freezer for 45 minutes.
- If we are not in a hurry, let it cool in the fridge.
- Clean the carp and cut it into fillets or horseshoes.
- Place it on an aluminum grill tray.
- Rub it with salt on both sides and put a slice of herb butter on top of each caper
- We grill really slowly until it is ninety percent cooked.
- Then we cover it with a second aluminum grill tray and finish baking.
- We do not turn anything during grilling.

You can also make more durable products from carp meat, such as in the case of roasts. In this way, among other things, you can cleverly preserve the remains of uneaten fried carp.
In the times of our grandmothers and great-grandmothers, other recipes were prepared with carp, but they do not often appear on plates in modern households. An example is blue carp or carp in jelly.
This fish goes well with root vegetables and the sweet and sour taste suits it. Carrots, celery and parsley are suitable for the basis of soups and sauces.
However, you can serve it either just with bread or with potatoes in different ways.
