  • 120 g plain flour
  • 2 spoons of granulated sugar
  • 1 and 1/4 teaspoons baking powder
  • 1/4 teaspoon of baking soda
  • 1/4 teaspoon salt
  • 1 cup full-fat yogurt
  • 2 large eggs
  • 2 tablespoons of melted butter or vegetable oil
  • 1/4 to 1/3 cup whole milk, optional
  • salted butter, maple syrup, honey and/or jam to serve

Method

  1. Heat a large skillet over medium-high heat.
  2. Turn it regularly to make sure it is heated evenly.
  3. Once the pan is hot, reduce the heat to medium and keep the surface hot. (You want the drop of water to bounce on it, but not splash, that’s too hot.)
  4. The right temperature and maintaining an even pan temperature is the key to well-made fritters.
  5. While the pan is heating, prepare the batter.
  6. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  7. In another bowl, mix the yogurt and eggs.
  8. Add the yogurt and egg mixture to the flour mixture and mix.
  9. Stir in the melted butter or oil.
  10. If the batter is too thick (which can happen based on the consistency of the yogurt used), slowly add 1/4 to 1/3 cup milk.
  11. Spray the pan with oil.
  12. Spoon the batter onto the pan and form fritters, which you fry until bubbles form on the surface, about 2 minutes.
  13. Flip the fritters over with a spatula and fry until golden – about another 2 minutes.
  14. Work in batches and fry only as many fritters as will fit in the pan without them touching each other.
  15. Transfer the fritters to a plate and serve hot with butter, maple syrup, honey or jam.

Yogurt and quinoa fritters

Try this recipe for light, fluffy fritters that you will never get enough of. In addition, they are gluten-free, without refined sugar and their texture is incredible.

Ingredients

  • 1 and 1/2 cups quiono flour
  • 1 and 1/2 teaspoons of baking powder
  • 1/4 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 170 g plain Greek yogurt without fat
  • 2 teaspoons of vanilla extract
  • 1 cup plant-based milk (e.g. unsweetened vanilla almond milk is excellent)
  • 1 whole egg
  • 2 tablespoons of maple syrup or 1 tablespoon of honey
  • serving tips: add 1/2 cup chocolate chips to the batter or garnish with your favorite fruit

Method

  1. Mix the dry ingredients (flour and salt) in a bowl and sift.
  2. In a separate large bowl, whisk together the wet ingredients until smooth.
  3. Add the dry ingredients to the wet and mix gently until well combined.
  4. The dough should be thick but not dry.
  5. Let sit for a few minutes while you heat the pan.
  6. Lightly grease a non-stick pan and heat over medium-low heat.
  7. Pour about 1/4 cup batter into the pan for each fritter and wait until bubbles start to form around the edges, then fry for about 2-3 minutes.

You and your whole family will love tasty fritters made from yogurt, lemon peel and poppy seeds. Serve as a hearty breakfast or dinner.

Ingredients

  • 1 and ¼ cups milk of your choice
  • 2 eggs
  • ½ cup Greek yogurt
  • 1 cup whole wheat flour
  • 1 cup plain flour
  • 1 and ½ spoons of baking powder
  • 1 spoon of poppy seeds
  • zest of 1 lemon

Method

  1. In a bowl, mix all the wet ingredients (milk, eggs, yogurt) to incorporate well.
  2. Add the dry ingredients (flour, baking powder, poppy seeds, lemon zest) and mix.
  3. Brush a non-stick pan with a little coconut oil
  4. Pour 1/4 cup batter per fritter into the pan and fry over medium heat until bubbles form (about 2-3 minutes).
  5. Turn the fritter and fry on the other side.

Gluten-free yogurt pancakes

Incredibly fluffy pancakes made from yogurt and gluten-free oatmeal are perfect for breakfast or weekend brunch.

Ingredients

  • ½ cup full-fat Greek yogurt
  • ½ cup unsweetened vanilla almond milk
  • 1 egg
  • 1 tablespoon of coconut sugar
  • 1 teaspoon of vanilla extract
  • ¼ teaspoon almond extract
  • 1 and ¼ cups of gluten-free oatmeal
  • 2 teaspoons of baking powder
  • ¼ teaspoon salt
  • optional blueberries or chocolate chips

Method

  1. Add all ingredients (except optional) to blender and blend on high until completely smooth, about 30 seconds to 1 minute.
  2. Let the dough sit in the mixer for 10 minutes; this is important for the dough to thicken properly!
  3. After 10 minutes, brush the pan lightly with butter or olive oil and place over medium heat.
  4. Once the pan is hot, add about 1/4 cup batter to the pan for each fritter.
  5. Immediately add 5-6 blueberries or chocolate chips to the pancake and fry for 2-4 minutes until the pancakes puff up slightly and you see a few bubbles around the edges.
  6. Turn the fritters over and fry until golden.
  7. If you find that they are browning too quickly, you need to lower the heat.
  8. Clean the pan and repeat with new oil and remaining batter.

Ingredients

  • 1 banana
  • 2 eggs
  • 1/2 cup + 2 tablespoons oatmeal

Method

Spelled fritters with vanilla bean

If you’re craving a sweet breakfast, it doesn’t always have to be unhealthy. Make these Greek yogurt, spelt, vanilla, and strawberry pancakes that you’ll be dying to eat.

Ingredients

  • 1 cup spelled
  • 1/4 teaspoon salt
  • 2 teaspoons of baking powder
  • 1/2 teaspoon cinnamon
  • 2 tablespoons of cane sugar
  • 1 egg
  • 3/4 cup milk
  • 1/2 cup vanilla Greek yogurt
  • 1 teaspoon of vanilla bean paste

Method

  1. Mix dry ingredients (first 5 ingredients) and set aside.
  2. Mix wet ingredients (last 4 ingredients) together until well combined.
  3. Pour the dry ingredients into the wet ingredients and mix until well combined.
  4. Heat a grill pan to 175 degrees Celsius.
  5. Spray the pan with non-stick cooking spray.
  6. Pour about 1/3 cup batter onto the grill pan and repeat.
  7. Arrange the fritters so that they do not touch each other.
  8. Fry for about 2 minutes and turn.
  9. Fry for another minute and put on a plate.

  • 1 egg
  • ½ cup Greek vanilla yogurt

  • 3 teaspoons of cinnamon

  • ⅛ teaspoon of salt
  • 1 cup grated apple

Method

  1. Mix eggs, yogurt, milk and vanilla in a bowl.

  3. Add the grated apple and mix again.

  3. Pour the wet ingredients into the dry ingredients and whisk everything together until you have a smooth dough.
  4. Spray a non-stick pan with cooking spray and heat over medium-high heat.
  5. Pour about 2 tablespoons of the batter into the pan and once you see bubbles on the surface of the pancake, flip it over!
  6. Once both sides are lightly browned, remove the fritter from the pan and repeat.

7 tips to have the best pancakes every time

  1. Check the freshness of the baking powder . If your baking powder is old or expired, you’ll end up with pancakes that are flat, not light and fluffy.
  2. Whisk in the dry ingredients to avoid large lumps .
  3. Do not mix the dough , otherwise it will be stiff and sticky. If you have beaten the dry ingredients, combine them with the wet ones by just mixing them lightly with a spoon.
  4. Let the dough rest for at least 15 minutes .
  5. Use a large pan, ideally a grill pan .
  6. Always wipe the pan thoroughly between batches of fritters and use new oil/butter.
  7. Give your fritters enough attention . Do they brown too quickly? Turn off the heat a little and let the pan cool for a minute before the next batch. Does it stick a little or a lot? Add more butter or oil.
