Roast beef from Znojmo with rice
Znojmo roast is beef prepared on pickled cucumbers. Enjoy!
INGREDIENTS:
- 500 g of beef back meat
- 80 g pickles
- 7 g of salt
- 25 g bacon
- 2 onions
- 30 ml of oil
- 30 g plain flour
- 20 g of mustard

METHOD:
- Wash the beef, dry it, pierce pieces of bacon (either with a skewer or a pointed knife along the grain of the meat).
- Then salt it, apply mustard.
- Give it a quick pull from all sides, then set aside.
- In the same pot, fry the diced onion and fry until brown.
- Then put the meat back in the pot, cover with a little water and simmer under the lid until soft.
- Add water occasionally, then add pickled cucumbers towards the end.
- Cut the cucumbers into cubes and add them, cook until soft.
- Before the end of cooking (about 10 minutes), thicken the sauce with flour mixed with lukewarm water (put the meat aside from the pot for that time).
- In particular, prepare the rice according to the instructions on the package.
- Cut the meat into slices and serve with sauce and rice.

Recipe for Znojmo sauce with pork
Even with pork, you can conjure up a very tasty fake Znojmo sauce.
INGREDIENTS:
- 600 g of pork leg
- 35 g of bacon
- ground black pepper
- 90 g pickles
- 2 eggs
- mustard
- salt
- flour
METHOD:
- Cut the meat into slices and pound with a meat mallet, salt, pepper and rub with mustard.
- Cut the bacon into cubes and fry just until dry.
- After a while, the juice will release, then fry the meat on it from both sides.
- Cover with a little water, cover with a lid and simmer.
- Baste with a small amount of water during stewing.
- Before the end, add cucumbers, chopped eggs and cook for a while.
- Then thicken with flour mixed with lukewarm water and boil for at least another 10 minutes.

- 30 g of bacon
- 2 tablespoons of mustard
- 2 tablespoons plain flour
- 3 pickles
- 4 spoons of sterilized capsicum
- water
- salt
- pepper
METHOD:
- Cut the bacon into cubes and fry until it renders the fat.
- Then fry sliced, pounded, salted, feathered meat smeared with mustard on it.
- After pulling, cover with water and simmer gently.
- Before the end of cooking, add chopped cucumbers and capsicum.
- Thicken with flour mixed in lukewarm water.
- Cook for another 10 minutes and season with cucumber juice and season as needed.

Znojmo sauce or Znojmo roast
